| Notes: I went with the cherrywood smoked malt to give the beer a certain 'bacon' characteristic. There is an additional addition of 1lb. of maple syrup in the secondary - just rack on top of the syrup. |

Notes: Empaste con 4 litros de agua por kg de malta.
El macerado es con 20 litros de agua. Ayudo al macerado usando alfa amilasa, agrego 4 ml. Con esto trato de sacar todos los azucares posibles. Unos 10 minutos antes de terminar el macerado agrego 100 gramos de avena para ayudar con una espuma mas densa a futuro.
Mi macerado se hace durante 60 minutos, la olla de macerado posee una bombita periferica con lo cual voy recirculando todo el tiempo.
Lavado de granos con 12 litros de agua.
Quedan 16-17 litros finales despues de las perdidas. |

Notes: Anyone remember the West Coast styles and Breweries? Places like Russian River, Sierra Nevada, Alpine... Styles like American Pale Ale, West Coast IPA??? It is understandable that if you're part of the haze mono culture that for the last 4 years has dominated both the home brew and commercial beer universe, you've most likely forgotten about the styles that in many ways created the new world of beer!
Strata is the new dank kid on the brewhouse. Strata is beaming with Mango, tamarillos, grapefruit smoothies and adventures in mystical pine forests. Yes you're probably thinking after this that 'I should brew a 'Strata' accentuated NEIPA'..... nah, why not do something different... That's right... something other then a NEIPA. Calm down, it's not the end of the world. Put the ego aside and brew this!
Call it what you want, this is homage to West coast style American Pale Ale, featuring Strata.
