Notes: Boil for 60 minutes. Whirlpool for 40 minutes.
Pitch the yeast and ferment at 67°F (19°C) for 2–3 days, then allow the temperature to rise slowly to 73°F (23°C) by the end of fermentation to ensure full attenuation. When fermentation reaches 1.5–2° Plato from terminal gravity (1.020–1.022), add the first dry-hop addition. About 4 days later, add the second dry-hop addition for another 4 days. Package at 2.6 volumes of CO2 and consume fresh. |

Notes: Total of 5 Gallons RO Water needed. Add salts per Other Ingredients list.
Put 3.5 Gallons in the kettle to mash in. Heat up 1.5 gallon of water to 170F to wash the grain ball after pulled from kettle. Add Palm sugar to wort while it is heating to the boil.
Should end up with 4.25 gallons to boil. This will leave 3.7 gallons for the fermenter.

| Notes: This is basically the mosaic ipa kit from northern brewer. The numbers come out looking kind of crazy. Brewers friend says it’s closest to an imperial ipa. If I looked at the receipe numbers (IBU, ABV, BU/GU) I might not have made this beer. But I did and I am glad. It’s a fantastic beer that everybody really enjoys. It’s a big beer but is really easy drinking. The hop aroma is insane. Bubblegum, berries, pine, and mango. |
