Notes: Upscaling from a two vessel mash to get appropriate fermentation volume.
Split grains in half.
Heat 10 gallons of water in big kettle and 5 gallons in small kettle.
5gal:
1.33g calcium
5g gypsum
.33g salt
10gal:
2.66g calcium
10g gypsu,
.66g salt
Mash in 7.5 gallons in original mash tun
Pour 5 gallons of small kettle into remaining 2.5 gallons in big kettle.
Mash in remaining grain in big kettle.
After mash is done, collect from mash tun into small kettle.
Collect from big kettle into small cooler.
Remove grain from big kettle and pour both small kettle and small cooler into big kettle.
Boil and continue as needed. Lauter through cooler tun for any extra preboil volume.
Properly measure volume added to fermenter and add treated water as needed for 11-12g.

Mash was kind of stuck, i had to stir constantly for the mash to flow. Don't know if it's due to high mash thickness or due to finely ground grains. OG was 1.052. Pitched 1 pack of WB-06 for 25L of wort, stressing the yeast usually works for me in terms of aroma and flavour. Pitching temp was ca. 30ºC. Every now and then i'll thoroughly shake the fermenter. Fermentation time to be defined.

Fermentation is very active. Krausen can be seen through the walls of the fermenter (white bucket). Fermentation temperature is 18ºC and air humidity may vary.

Fermentation is active. Krausen has fell, however the airlock is still showing a significantly higher pressure inside: might be due to older trapped air that has simply not come out due to fermentation slowing down. Airlock definitely has Krausen bits in it. |

An Imperial Black Belgian Ale aged in old Invergordon Scotch whisky barrels with mountains of raspberries, tayberries and blackberries in each cask. Decadent but light and dry, this beer would make a fantastic base for ageing on pretty much any dark fruit - we used raspberries, tayberries and blackberries beause they were local. Don't worry too much about controlling the temperature with the Belgian yeast strain - just make sure it doesn't rise above 30°C!
