Notes: Ferment at 67°F (19°C) for the first 24 hours. Add
clear Belgian candi syrup directly to the fermenter
around day 3. Increase the temp by 3°F each day
until it hits 80°F (27°C). Maintain temperature at
80°F until done. If temperature control is an issue,
let the fermentation ride on its own for the first
few days, and then figure out a way to keep the
fermenter warm. A space heater will work. The key
is to keep the ferment warm to help produce all
those wonderful esters this yeast blend provides |

Notes: -light honey clover or alfalfa - 1.5 lb
-dried malt extract - 1kg
-1.5 x 6 inch cinnamon stick
-grated orange peels from 6 orange (4012 -Canada)
add the crushed crystal and black patent malts to 1.5 gallons of cold water and bring to a boil.
when boiling, remove the grains. add the malt extract, honey, boiling hops and continue to boil for 45 minutes.
add the ginger, cinnamon, orange peels and continue to boil for another 10 minutes.
add finishing hops during the final 2 minutes of the boil.
sparge into fermenter and cold water.
pitch the yeast when cool.
bottle when fermentation is complete up to 4 weeks |

Notes: A Oceania take on a Trappist Blone.
Based on TMF's Westwletern VI clone https://www.themadfermentationist.com/2016/04/westvleteren-belgian-blond-clone-recipe.html (with his recommended changes for upping hopping and reducing ale malt ratio).
But using Aus/NZ ingredients. Dr Rudi for bittering, Hallertau -> Pacifica, and StyGo -> Ella/Motueka (not sure about this substitution - I might have gone for Pacific Gem but couldn't source it).
NB: I planned to have ~5% cane sugar, but ended up with a far better efficiency so dropped it. Once I've adjusted efficiency for fly sparge, can add the 5% cane sugar back. |

A few comments:
Boulevard's Website states they use Simcoe, Magnum, and Amarillo.
I used other citrus/floral hops because that's what I had in my refrigerator.
It has also been suggested to increase the % of corn and reduce the percentage of Wheat in the grain bill
