Used about 38g of Willamette original recipe is Kent Goldings.
Nice dark red colour in the wort.
Got 1.057 at 14L and ended up with OG: 1.06.
Pitched at 22c.
Day 1:
Ended up running hot as on day 1.
Left in a cool room it was 22 for most of day without heat or blanket.
Day 2: Fermenting at 20, krausen might have fallen.
Day 3: Slowed considerably, krausen gone and its at 1.028.
If the mash was 70c -> FG 1.018
72c -> 1.022 which is still ok but getting sweet. Should be at most 1.018 for this style. Recipe says it should be 1.015.
Perhaps it best to keep temps rising and start low with US04.

Notes: For the vanilla bean, open the bean, scrape the seeds, chop up the husk and add everything to the tincture jar.
For the cinnamon stick, break up the stick so that you can cover with 1-2 Tbsp of rum.
Make a Tincture using 2 Tbsp of light Puerto Rican rum or a Coconut Rum, adding a scraped vanilla bean & cinnamon stick.
1 week after brew day, prepare to rack to a secondary.
Preheat oven to 150° F, toast coconut until golden brown (about 40 minutes). Turn the coconut every 10 minutes to ensure even toasting. Rack beer onto the toasted coconut & your rum tincture.

Notes: After mashing out, lauter into sterilised demi johns 9/10 full. Add bagged uncrushed base malt to some wort at 49C for 30 mins, top off demi johns right to the top with inoculated wort, and then blast some CO2. keep the wort warm, (30-40) for 36 hrs. take pH readings reguarly, close to 3.5 is the goal.
Slightly off cream corn smell should be expected, if there are vomit garbage shit smells then probably aerobacter infection.
towards 25-30 for clean lacto, toward 50 for citric funk. too high kills lacto.
15 min Boil and chill, ferment with clean ale yeast.

Notes: Dry hop method:
Per 1oz hops, soak in star san solution 1 muslin bag and 1.5oz glass marbles. Add marbles to muslin bag, then add hops. Tie an overhand knot as close to the opening as possible, and quickly & gently place in fermentation vessel.
Fermentation, dry hop, and bottling schedule:
Pitch into a sanitized 7gal plastic bucket for primary fermentation, ferment at room temperature, 67F to 72F.
1 or 2 days after peak fermentation, prepare and add first dry hops.
Once airlock bubbling dies down to about once every 20 seconds, add second dry hops to a sanitized 3gal glass carboy, then rack beer into carboy. The goal is to fill up the carboy as much as possible, leaving as little air space as possible. If beer doesn't quite reach carboy neck, carefully add sanitized marbles until it does.
After airlock bubbling has completely stopped, but no later than 12 days after racking, prepare to bottle beer by sanitizing bottles and adding 5 carb tabs and a pinch of CBC-1 bottling yeast to each. Use air filter and double-nozzle carboy cap to siphon beer to reduce contamination.
