Notes: Method:
1. Heat 19l of water to ?°c
2. Add grains and mash for 1 hour at 69°c
3. After an hour raise temp to 80°c
4. Mix well and leave settle for 15 minutes?
5. Drain and recirculate then pour into boiler.
6. Add 14.6l of water at 80°c to the mash.
7. Mix well and leave settle for 15 minutes.
8. Drain and recirculate then pour into boiler.
9. Boil wort for 1 hour, with the following additions:
60min 25g Fuggles
45min 20g Bramling Cross
7min Whirlfloc tablet
5min 10g Fuggles
5min 10g Bramling Cross
10. Pour wort into sanitised fermentor and cool rapidly to 20°c |

add lime at kegging/carbonation. (18 grams/1 pack in each keg) - after brewing this several times, 18g of the crystallized lime is HEAVY. It’s drinkable if you love lime. But moving forward, probably only 1/2 pack per 5 gallon brew.
reusing previous American lager yeast from another brew.
Omega yeast - (OYL-103)
mash for 90, boil for 75.
I’ve brewed this beer twice, so far. First as a 5 gal, then a 10.
In the first brew, the yeast stalled, I think I under-pitched, so the abv was way low.
In the second, 10 gallon brew, there was clear channeling in the mash tun around the sides, and the OG was lower than expected.
Third time is a charm! - Third brew went very well, no channeling, crystal clear lautering, good mash efficiency (91%). Healthy starter, expect good fermentation. |

Notes: Yeast had expiration date a month ago , I had two packages so I added both. Tossed them in some RO water as the package suggested and about 1/2 hour later it was crawling out of the jar so I guess it was good.
I just buy kits from Northern Brewer, I add one extra pound 2 row to the kit to meet the Original gravity. This time it I came out about 8 points high... |
