Notes:
Strike with 10 gallons at 165 to hit 152. Verify Mash PH is 5.2. Adjust if necessary with lactic acid. Sparge with 12 gallons at 165-170
Pitch yeast at 60. Add 1vl for 2min of pure 02 prior to pitching. Ferment at 66. Raise to 70 degrees after a few days to clear diacytle.
Special roast is like a higher toasted victory. Use EKG for IBU if you have them over Perle.

Notes: Very short boil (20min) to leave proteins for the wild yeast to eat.
Week 1: Primary fermentation with ale/lager yeast (plastic carboy or whatever).
Week 2: Rack to secondary, still ale/lager yeast (plastic or whatever).
Week 3: Rack to a glass or PET container (air tight, glass is better to sanitise the wild yeast when finished). Add wild yeast. Leave for at least 6 months or more (years?). Put in a cool place, although some say room temp is ok. I leave mine in room temp during summer and it could reach above 25c.
3 months before bottling: Add fruit. 200 grams pr liter beer. My fruit has been frozen, then pasteurised in a kettle at 80c for half an hour.
Add oak chips for the last 2 weeks.
Ale yeast: Whatever, but a Belgian ale yeast is preferred (because of esters). Or Lager yeast. 1 vial is good, no starter.
Wild yeast: WYEAST 3278 BELGIAN LAMBIC BLEND, or whatever brett.

1 tablett protaflock og 2g gjærnæring ved kokeslutt.
Einerlåg, ca 21 l til mesk.
Fikk veldig lav effektivitet (noe lav effektivitet var forventet) pga malttype (umodifisert), + muligens litt grovere kverning enn vanligvis. Og mye malt i røret.
Stegmesking : Kunne mesket inn ved 40c i 20 min for å prøve å få enzymmodifiserig / øke effektiviteten - deretter 55c og 67-70c). Det var egentlig tanken med innmeskingen vi gjorde på ca 53-54c (som vel bare endte opp som ett ekstra protease-steg / redusere chill haze)
9l på dunk med 1pk /11g Voss kveik tørrgjær
9l på dunk med Lallemand Windsor tørrgjær
Voss settes på ca 30c
Windsor ale på 19-20c
Gjæres i to uker. Flaskes med lav/ingen karbonering.
Forventet utgjæring:
Voss: gjærer ned til 1.012 (80% utgjæring) ca 6% ABV
Windsor: gjærer ned til 1.020 (65% utgjæring) ca 5% ABV

Notes: 1. In a large brew pot, boil 3 gallons of water.
2. With the pot removed from the burner, add 3.5 lbs honey. Make sure to stir the water so the honey dissolves completely and doesn’t burn on the botttom of the pot. When the honey fully dissolved, return the pot to the burner.
3. As the liquid starts boiling again, add 1 0z Cascade pellet hops and boil for 60 minutes. After 15 minutes add ½ oz Centennial hops, After 15 more minutes add ½ oz Citra hops. After 15 more minutes add the other ½ oz Centennial hops. with 5 minutes left in the boil, add the other ½ oz Citra hops. (it helps to contain the hops in individual muslin bags)
4. At the end of the boil, remove the pot from the burner and let cool to about 90 degrees fahrenheit. Remove the hop bags and dissolve the remaining 3.5 lbs of honey
5. Add the must to a 3 gallon primary fermenter, aerate, and pitch the yeast.
6. Seal fermentor with airlock and store in a dark place at a temperature of about 70 degrees.
7. After 2 weeks, with a siphon, re-rack the mead into a sanitized 3 gallon carboy.
8. Add the cascade leaf hops in a muslin bag to the secondary.
9. After 2 weeks, re-rack, then let age for 4 months.
10. Dissolve the corn sugar in 1 cup warm water and add to carboy.
11. Fill sanitized bottles and let age for at least 2 months. |
