Their oxygen and spaced out nutriuent regimen were a big help and even though it was my first big stout I had no fermentation problems
"You should also consider oxygenating twice, once at pitch, and once 12 hours later, to ensure the yeast has all it needs during its reproductive phase. You can charge your beer up to 8ppm of oxygen using an air pump oxygenation kit. In addition, you should look to add extra yeast nutrient to the beer. Adopting a staggered nutrient addition regiment, similar to that used by mead makers to ensure healthy and complete fermentations in high stress scenarios. Instead of adding the entire dose of nutrients when you pitch your yeast, simply add 1/3 of a full dose at pitch, another 1/3 after the lag phase has ended, and a final 1/3 a day later." |

Notes: Traditionally these were made by using the first wort drained from a large batch of malt, the rest of which went into lower gravity beers.
It is possible to duplicate this procedure on the small scale by:
i) using a very stiff mash
ii) sparging very slowly
iii) cease collecting wort when the gravity has dropped to a critical value – about 15 below the beer OG.
Change the vessel receiving the wort and continue sparging slowly until the SG of the second wort drops to 50 below the beer OG.
Boil the second, weaker wort until the SG (adjusted to room temperature) has risen to 15 below the beer OG.
Add the first wort and raise to the boil. Add the hops and boil for 1 ½ hours.
Ferment with good quality ale yeast.
Dry hop with 1/2 oz Goldings.
MATURE FOR AT LEAST 1 YEAR.

Notes: using my standard practice for the best fermentation, ferment for 5 days at 62f then shake and raise the temp to 68f for 4 more days, set out at room temperature for 1 day, pull into a keg for cold crashing at 34f, hook up c02 at 12 and carb while conditioning for 7 days at the same time adding gelatin, after 7 days check for carbonization then serve
this will taste light and be easy drinking |

Notes: Brewed for the Ale Yeah! and Marlay house Brew and Mash Off sponsored by Terrapin Brewery. Won 3rd place of 17 contenders. First competition with a rather crude mash set-up. Phenomenal pine, grass and citrus notes. Have eliminated 50 minute bittering, as I think it is a bit too bitter for my taste. |
