Notes: Because this bill has >25% unmodofoed adjunct, it is highly suggested to perform a beta glucan rest at 110F for 20 minutes before stepping up to sacc rest temp. an additional protein rest at 125F for 20 minutes wouldnt hurt either to help prevent chill haze.
Mash at 148°F for 30 minutes then ramp up to 168°F to mash out for another 30 minutes until running clear. Lauter and sparge to kettle until you reach about 20 gallons depending on your evaporation rate. Boil for 90 minutes and add finings and hops according to schedule. After boil perform whirlpool for 10 minutes then allow to steep/settle for another 15 minutes. Chill to 68°F, aerate and pitch yeast.
As fermentation slows (4-5 days), drop braünhefe or transfer to sanitized secondary and be sure to include clean healthy yeast leaving behind as much trub as possible. Dry hop to schedule and this will introduce hop creep which will further dry the beer. Good opportunity to spund at this point if you have the capability. Once fermentation is complete and force diacetyl test has been performed to satisfaction, crash to 28°F. Dump cone or rack to 3rd sanitized vessel off of hops/yeast and add appropriate amount of biofine to help clarify. Package when you feel its ready. Carbonate medium-high for a crispy mouth feel and enjoy/share as quickly as possible. |

2.5 Gallons Tap Water
4 Gallons Bottled Water – Note: even though this is a 5 gallon recipe, you will need extra because of the fluid loss during the boil process
1lb American Two Row
1lb German Munich
.5lb Carapils
7bs Dry Malt Amber Extract
4oz Summit Hops
1oz Liberty Hops
1oz Willamette Hops
1 Pack Nottingham Dry Ale Yeast
Procedure:
Start with 2.5 gal tap water, heat water to 165 degrees and steep grains for 30 minutes
Remove grains and bring wort to boil
Remove pot from heat, add 7lbs Dry Malt Amber Extract and return wort to boil
Add 1oz Summit hops and boil for 60 minutes
Add 1oz Summit hops and boil for 30 minutes
Add 1oz Summit hops and boil for 15 minutes
Add 1oz Liberty hops and whirlpool for 5 minutes
Cool wort to 70 degrees
Add enough bottled water to bring the specific gravity to 1.070
Add Nottingham Ale Yeast
Fermentation:
Primary – 2 weeks at 60-68 degrees
Secondary – 5 weeks at 60-68 degrees
Add 1oz Willamette hops to secondary fermenter 14 days before bottling day
Add 1oz of Summit hops 5 - 7 days prior to bottling day
Bottle beer 5 - 7 days after last dry hop addition
Bottling:
6 weeks after brew date
Use .2oz of corn sugar per gallon of beer.
Condition beer for 4 weeks at room temperature

| Notes: Mashed with 15 l strike water at 67 C for 60 minutes, with 3 g gypsym added to the water. Sparged with 10 l 78 C water. OG measured to 1.057 after boiling for 60 minutes. 15 litres in primary, pitched Danstar American West Coast BRY-97. Fermenting at 18 C. Dryhopping with 40 g Citra after 7 days, and raising to 21 C. FG measured to 1.007 on bottling day, two weeks after brewing. 9 l transfered to cornelius keg, 5 l bottled with 7 grams table sugar/litre. Tasted beer five days after kegging. Should have had a little bit more bittering hops, but otherwise it is quite good. Almost clear with a nice, stable head. Crisp and dry with a nice bite from the dry hopping. |

Notes: Step mash: 45 minutes at 150°F (66°C), ramp to 170°F (77°C) over 15 minutes (or ramp by infusing 2.5 gallons boiling water), rest 10 minutes at 170°F (77°C).
Vorlauf until clear.
Collect 6.6 gallons (25 L), sparging with 175°F (79°C) water. Boil vigorously for approximately 75 minutes, hopping as in ingredients section.
Whirlpool and allow to settle for 15 minutes. Chill wort to 64°F (18°C). Aerate wort and pitch yeast.
Ferment warm (ale temperature). Dry hop one week into fermentation.
Allow two hearted clone to stay warm with hops for a week.
Rack beer, crash cool, and cold age for a week.
Rack beer, prime with sugar and bottle. |
