Notes: Ferment for 7 days or until fermentation slows. Rack onto Cascade hops in secondary and dry hop for 14 days, or until fermentation stops.
Add Gelatin (optional) and cold crash for 3 days, transfer and bottle. Condition for 21 days, chill for 3 days, enjoy.
This is a beautiful Pale Ale, tons of hop nose and flavor. SUPER easy to brew, and drink! This is one of my favorite summer brews...HG |

Notes: Primary Fermentation: Was complete within 1 week. 3rd successive identical FG measurement taken on day 9.
Secondary Fermentation: 6-9 months with the majority of that time spent aging on oak cubes (see below)
Add 1.3 oz. Hungarian Oak Cubes (med. toast) and 0.7 oz. American Oak Cubes (Med. plus toast) to secondary
Prepare by soaking in bourbon x2 weeks. Discard bourbon (it's hard to take away bourbon flavor once it's added to the fermenter!).
The story behind the name:
Baptist minister and distiller, Rev. Elijah Craig (1738-1808) is widely credited with inventing Bourbon Whiskey, and was the first to utilize extended aging of the spirit in charred oak casks to impart Bourbon's distinct flavor and color. |

Notes: I've had a couple of "golden stouts" that I thought were very interesting and good, so my goal was to mimic that with my own recipe. I wanted to use golden/blonde ale as a general style, though I knew this was going to fall outside of some style guidelines.
I used lactose to provide some residual sweetness (think creamer in coffee), which worked really well I think. I tasted the beer after a few days in the keg (pre- coffee addition), and it had some sweetness but not too crazy. To add coffee flavor, I got some whole beans from a semi-local roaster (Wichita Spice Merchant). I spoke with one of the roasters there and he recommended "Brazil Maniqueira" (https://www.spicemerchant.com/product/brazil-mantiqueira/). I know next to nothing about coffee, so I would recommend using something you like or, if possible, consulting your local roaster. I added 8 oz of the coffee beans to a nylon mesh bag with some glass beads (to use as an anchor), and suspended the bag inside the keg with some unwaxed/unflavored dental floss. I tasted at 2 hours and was surprised how quickly the coffee flavor came through, but it wasn't quite where I wanted it. I tasted again at 4 hours and 7 hours, at which point I decided to pull the beans. The beer is pretty light so I didn't want to overpower the beer with coffee flavor. It ended up adding the desired roastiness and complexity that I was looking for. I'm super happy with this recipe. |

Notes: Mash, Boil, cool wort then in a separate pot boil a small amount of wort and add the coco powder. The coco is partly hydrophobic so you need to boil it to get it mixed properly, watch out for boil over because the coco makes a foamy mess. Dont boil for longer than necessary for coco to mix into solution, longer will result in bitter taste. Add the coco mixture to the cooled wort.
Vanilla beans may be a substitute for extract, take care to note that the bean has much more flavor than the extract.
ferm at 60F, rest at 70 after 4 weeks for about a week. Drop to lager temp to get coco and haze out. Not all coco will fall out.
Ive brewed this a few times and its on par with the flavor of a New Belgian Ben and Jerry's Chocolate Chip cookie dough with a little more mouth feel and much darker color.
