- Use Granny Smith apples. Remove cores, puree to fine consistency and slowly add to mash. The added pectins will help increase haze without adding apple flavor
- Mash for 90 minutes

Notes: Starter protocol: 1084 grown from a single colony on wort agar. Max. 10x increase in volume per step. The eventual starter volume was ~500 ml, no stir plate. Sterilized wort (OG 1.040).
Hops: Whole leaf hops (2017) in hop socks with plenty of free space. Hops are removed after the indicated boil time has elapsed.
Wort was cooled in a cold water bath, using immersion chiller (the water runs through the chiller and then enters the waterbath so the bath is constantly being chilled, too). |

Notes: The brown malt in the recipe is made from the 2-row:
1. Place 800g of 2-row in large oven pan (max grain depth at 2cm) and cover it with tin foil
2. Preheat oven to 225C
3. Roast the malts in the oven for 20-40 minutes. Periodically take samples of the grains and cut them in half. When the inside of the malt is nice medium brown the roasting is complete. |

Notes: 200g desiccated coconut - toasted @ 150C for 40 minutes to turn slightly brown. 60g up toasted. Add after fermentation and leave for 10-14 days in secondary.
Next time place in a bag - bottling nightmare
Starting Gravity = 1.037
Final Gravity = 1.014
90min boil resulted in only 19litres collected. This also would increase the IBU as total volume was less perhaps.
Very well balanced beer. The base mild is excellent. A slight smokey note from the black malt yet sweet and creamy from the coconut - full bodied for a mild and luscious. No head use to oils from the coconut.
All have commented positively. |
