Notes: 4 quarts (4 ladles) for each decoction - decoct for 20 minutes - ensure water level and grain level almost even.
starter was made 48 hours before using 1:1 canned wort to water. Starter did not make a slurry, and needed to be scraped off the bottom. Would use a stir bar and a 24 hour starter next time with out going into the fridge.
pitched at 62F and cooled down to 50F
no protein rest for these highly-modified malts
very small amount of bubbling started about 5 hours after pitching yeast. this ramped up significantly over the next few days, reaching approximately 1-2 large bubbles a second. Bubbling only began to slow down on the 6th day of fermentation. |

Notes: This beer meets the BJCP requirements to be called a Scottish Heavy, though it's more like a Heavy Irish Red.
This beer is on the sweeter, more caramel noted side of Scottish Heavies. Hops character is minimal with forward floral and herbaceous notes, and spicy earthy background aromas. Minimal heavy roasted malts (in this case chocolate) were used to increase drinkability and softed any roasted, dry biscuit, toasty notes. Head should be persistent and aggressive. This Scottish Heavy may be clearer than typical Scottish Heavies, though flavor should be just as pronounced.
Be EXACT with the grain weights or the SRM will be drastically altered.
Cell count of pitch must be between 3-4x as much as a single packet.
Best served in a Thistle Glass (as shown in picture) - also known as a Scottish Ale Glass. The thistle glass is a variation of the tulip glass designed specifically to look like a thistle. The glass is relatively tall, often holding between 15 and 20 ounces making it slightly larger than your average tulip. It features a long stem, pronounced bowl (or bulb), and is topped with flaring sides. The design is specifically meant to resemble Scotland’s national floral emblem which provides a pretty direct clue towards its usage. |

Fermenting:
This yeast is good at low temperatures, usually about 64/65, and always keep it under 68F otherwise it'll get sure fruity/yeasty/gross. Ferment out and then let clean up for roughly 3,4,5 days then crash cool the beer to drop the yeast and maybe switch to secondary. |

Notes: Tuesday 15th September 2015 - 1.6L DME starter made for WY1318. Starter on stir plate for 36 hr before splitting. Saved 550 mL (~100 billion cells) for next batch. Crash chilled the remaining 1.1L so that I could decant before pitching.
Thursday 17th September 2015 - BIAB mash with 69oC strike water (28L). 64.6oC mash temp. Stirred for 2-3 minutes (lots of doughballs). 20 mins in stirred again and temp = 63.5. 40 mins in stirred again and temp = 62.6oC. After 1 hr temp = 61.5oC.
pH meter playing up so no mash pH reading. Adjusted as normal to hit 5.4. Saved a sample to test at work and soaked the pH electrode in KCl solution....
17L at 1.065. Diluted to 20L at 1.055. Pitched yeast at 25oC.
Saturday 26th September 2015 - Kegged with 125g Southern Passion. FG = 1.014. 5.4% ABV...
Kegged Wed 30th September 2015 - pressure transfer
Keg kicked Mon 19th October 2015 - new dry hopping seemed to work well. Beer had good hop flavour, though the aroma wasnt all I had hoped for. Overall one of the best IPAs I have made this year, but still only 80% of where I want to be. Will brew a similar recipe again very soon.
