Notes: I kept in primary for 20 days and tonight I racked it onto 2 oz of oak chips soaked in 4 oz of Jim Beam, which I had soaking for maybe 10 days (would have gone longer but slipped my mind).
Tasted it and I think it has excellent potential. It has a complex flavor which is rich in chocolate and has a pleasant after taste, seems well balanced and not warm of alcohol at all. I think the smell and taste are pretty similar to what Dragon's Milk must be like before the bourbon aging. If anything, I would have added a bit of dextrine for an increased body, but I won't really know until it's carbed. Only other desire is a little bit darker of a color, although my dad says he is happy with that.
I plan to taste it every two weeks until I reach the oak/bourbon character I want at which time I will bottle and report results after I drink the first. |

- Pitch yeast at around 68 F
- At 24 - 48 hours in the fermentation, add 8g of fermaid K
- let it naturally rise to 72-75 during fermentation
- until fermentation slows and FG is stable (7-10 days)
Cold crash & keg
- cold crash in keezer or fridge for ~ 2 weeks
- Then leg and carbonate at 30psi for 24 hours, or taking the carbonation route of your choice.

Notes: We roasted the Tunas (Cactus) on the BBQ, sliced and scooped the guts out, squeezed the skins for the last bit of juice, then froze the whole mess. We picked a 5 gal bucket of Tunas and wound up with 10 lbs of juice (split between two batches) after we thawed and sieved the mess.
Mashing Instructions:
Boil 2 gal of water, cut the flame and add the honey to the hot water. Stir. Stir some more..
Oh yeah, we put the yeast food and a Whirl Floc tablet into the water with the honey.
Pour the honey water over the Tunas mush in the primary fermenter.
Stir. Chill with an immersion chiller to 80 F.
Pitch the yeast. It's all good.
OG 27 Brix.
Extra Ingredients:
las Tunas - 5 lbs of juice per batch
Yeast:
mine: Cotes des blancs
OJ's: US 05, to be followed with Lalvin 1118 (champagne yeast) in secondary
Special Instructions / Notes:
Use leather gloves when dealing with las Tunas!
OJ racked his fraction on 10/28 and reports that the gravity at that time was 1.010. Amazing how much the US 05 attenuated it! He racked onto a slurry of rehydrated Lalvin EC-1118 champagne yeast. His is going to be a very dry mead.
I racked my fraction on 10/29 and the measured gravity was 1.008. The color is an incredible bright red-orange. I'm going to let mine roll without any further yeast additions.
It should be interesting to compare the two melomels in another couple of months. |

Bring to boil for 5 min then cool to 40 degrees.
Add 7mL lactic acid (88%) when temp reaches 60 degrees. Target pH is 5.3
Add lacto w/o airing the wort.
Keep at 45 degrees for 2 days. Target pH is 3.7
Bring to boil for. Add hops.
Cool to 20 degrees and put in fermenter w airing.
