Started boil with 6 lbs DME, last pound will be late addition at 15 min. Hops added per schedule. PB2 added first at 10 min to fully incorporated, followed by ginger, and then cilantro. NOTES- PB2 will clump, maybe premeasure and shake into avoid. Throw Cilantro leaves in a grain bag before dropping in kettle next time so that you don't get a stopped siphon. Butchered about 18 oz of Mango out of two good size thai mangoes (2 lbs) Sliced and deseeded 5 good size thai peppers (1/Gal)

Pitched at 19*C, positioned in uncontrolled room with ambient temperature of 22*C. 20/06/19 - SG 1.048 24/06/19 - Wallonian Farmhouse: 1.008, Dupont: 1.005 Ambient temp has increased to 25*C in loft, Dupont fermenter moved to hot water cupboard (28*C). 26/06/19 - Wallonian Farmhouse: 1.002 (6.43%), Dupont: 1.004 (6.17%) 02/07/19 -Wallonian Farmhouse & Dupont: 1.003 (6.4%) 03/07: Batches split, some from both batches bottled immediately. Rhubarb and frozen berry mix added to other batches at a ratio of 77g Rhubarb & 24g berries per litre (estimated). 11/07 - Bottled, 1 carb drop per 330ml

On the technique: Based on advice from the interwebs, we're going to sour this in the "kettle", which in our case will be into a plastic carboy specifically reserved for sours, then pour back into the kettle. So, the order of operations is: 1.) heat up strike water and mash as usual. 2.) Sparge and collect 6.25 gallons of wort in kettle 3.) Boil for 10 - 15 minutes to pasteurize - NO HOPS 4.) Cool to 95F, and bring ph down to 4.5 with phosphoric acid; collect into carboy 5.) Inoculate with OYL-605, the lacto culture, and let sit for 48 hours at ~93F. Should drop to 3.5 ph; MONITOR 6.) When terminal pH hit, POUR (Don't rack!) back into kettle; bring to boil 7.) proceed as normal with boil, hops schedule, primary ferment until complete (10 - 14 days?), then condition for two weeks. For next experiment, consider adding brett along somewhere between primary and secondary to make Joey Chestnut even funkier...

Final gravity reading of 1.067. 83% efficiency. 1.066 with yeast in 500m water. 3 x Safale S-04 re-hydrated in 500m of pre-boiled water at 37deg. C. SG after 3 days = 1.021. P.S.
