Notes: I kept in primary for 20 days and tonight I racked it onto 2 oz of oak chips soaked in 4 oz of Jim Beam, which I had soaking for maybe 10 days (would have gone longer but slipped my mind).
Tasted it and I think it has excellent potential. It has a complex flavor which is rich in chocolate and has a pleasant after taste, seems well balanced and not warm of alcohol at all. I think the smell and taste are pretty similar to what Dragon's Milk must be like before the bourbon aging. If anything, I would have added a bit of dextrine for an increased body, but I won't really know until it's carbed. Only other desire is a little bit darker of a color, although my dad says he is happy with that.
I plan to taste it every two weeks until I reach the oak/bourbon character I want at which time I will bottle and report results after I drink the first. |

Notes: Fine crush recommended! Due to the heavy grain bill, recipe is for 2.75 gal so it can be made in a 10gal brew kettle using BIAB, and also have plenty of headspace in a 6.5 gal carboy for fermentation. Two 2.75 gal batches can be combined for a full 5.5 gal batch in a keg or secondary fermenter. Starting mash water should PH at 8 to achieve desired mash PH.
For Ghost Pepper Bourbon tincture, infuse 2oz of bourbon with 1 ghost pepper for 15 minutes, then remove pepper.
After primary fermentation, add adjuncts to secondary for 1 week before racking to keg or final vessel for another 1+ month of aging at 63 degrees.

Notes: Won second place at the Minnesota State Fair in 2023 and 2022, Trappist/Monastic Ales.
Note: The idea was to use 3 of everything, hence the name Triops. 3 malted grains, 3 flaked grains, 3 hops, 3 yeasts,
3 spices.
Pitched at 70 and let free rise to 79 and held.
Very fruity. Not getting the spices, though the additions were pretty small.

The original BrewDog, Bracken decided to make a beer that best reflected himself; this is the beer equivalent of the big, cute chocolate monster. Soft, smooth, dark, chocolatey and a force to be reckoned with. This gentle giant will never bite, but you'll still want to be on your best behaviour! We recommend adding the chocolate malt at the start of the run off to ensure you extract the flavour and colour without imparting too much of the astringency of the malt into your wort. This will give the beer a really smooth mouthfeel, making this dangerously drinkable at 8% ABV.

Notes: 2/3 thick decoction = Approx 3.5 to 4.0 gal wet grain. Pulled decoction mash and set aside after the 154*rest. Heated main mash to 160* and then dealt w/ decoction.
Yeast Blend: Decanted 2nd Gen WLP838 slurry from a 24hr starter for about 600-700B cells. Added three activated WY2308 packs for insurance.
2nd: 2019 Indiana Brewers Cup vs 21 entries (3 months after brewday)
3rd: 2019 Dixie Cup vs 17 entries (6 months after brewday)
This beer peaked at about 4 months.
