7.1% ABV 45 IBU
12 lb Mecca Grade Lamonta Pale Malt (85%)
1.5 lb Flaked Oats (10%)
0.75 lb Weyermann Carafoam (5%)
Mash:
Single Infusion mash at 152 F (65 C) for 60 min
Water (ppm): Ca: 128, Mg 9, Na 39, Cl 219, SO4 130, HCO3 0
Add to 8 gal (30 L) spring water: 5g Gypsum, 3g Epsom, 3g NaCl, 10g CaCl2
Adjust mash pH to 5.2-5.6 with lactic acid or slaked lime if needed.
60 min - Add 0.55 oz (16g) Magnum (13% AA)
20 min - Add 0.25 oz (7g) each Citra (14% AA), Simcoe (12.9% AA), and Amarillo (7.7% AA)
0 min - Add 0.25 oz (7g) each Citra (14% AA), Simcoe (12.9% AA), and Amarillo (7.7% AA)
Dry Hop with 1.75 oz (49g) each of Cryo Citra, Cryo Simcoe, and Cryo Amarillo (or 3.5 oz (98g) of each non-cryo hop) from days 7-12 at 60 F.
OG: 1.072
Yeast: Wyeast 1318 London Ale III
Ferment at 68 F (20 C) with no added pressure for the first 7 days or whenever primary fermentation is done, soft crash to 60 F (15 C), dump yeast after 24 hours, and add dry hops, allowing 5 days of contact time while spunding to 10-15 PSI (.67-1 bar). Cold crash to drop hop debris and package with closed pressure transfer.

Notes: After Sparge….raise temp and boil wort for 10 min...turn off burner chill to 95F and add enough Lactic Acid to reach a ph of 4.5 (I have 4 tsp listed)...Add 16 oz of Pomegranate Blackberry Goodbelly drink, purge with C02, cover with cellophane and wrap in a blanket...maintain at 95F for 24 hrs.....then test for PH...target is 3.3 - 3.5, boil recommended time, add hops and flavorings per schedule and then chill to 64F.
Ferment for 5 days, 2 days at 64F then 3 days at 65F. Add 192 oz of POM juice....(four of the 64 oz containers) and let ferment for an additional 7 days....at 66F. Transfer to Keg and chill to serving temp and carbonate to 3-3.5 vols. Enjoy!!

Beer came out super duper clear!
1) put dry hops in fermenter
2) cold crash for 3 days
3) transfer cold beer to keg and immediately add gelatin
4) leave on high pressure for 3 days

brew day went fine. 2.5 hour mash (because of scheduling) got the g40 mash recirc working well the wort was really clear.
decided to leave out the cane sugar, had good 70% efficiency for 1.074 wort and ~8.0% expected abv. that will be plenty.

added hops, water calc is being weird or else i dont understand. for balanced profile its saying i need 100ppm and that my starting water is 0.something when it should be 50 something to start with?? could add baking soda to increase it but ive never had to do that before??

getting more real/practical. swapping hops and yeast for some stuff that i have on hand. dropping efficiency down.
i dont have faith the flaked corn will add any gravity points. do you need to cook it first?

corn syrup too expensive. could go sugar or grits, but lets take this opportunity to use flaked corn. similar in price to grits. never used before. maybe get different flavor than grits. i dont think you need to cook them, so simpler than grits. less efficient than corn syrup so boost the grain a little and add a lb of sugar.

getting pretty real. worried about using 32% corn sugar so reducing that to 20%. prob will brew on old system but efficiency will prob be high with the sugar, adjusting up to 68. Might use lutra....
adjusting grain bill. prob dont want to use karo since it has vanilla. comes in 32floz jars which is about 2.75 lbs. there are some in amazon that dont have vanilla but like 10 bucks, we need something cheap for the philosophy of the brew, not shipped. or else might as well just use cane sugar.
consider using citra noble or some other lager hop you have on hand other than cluster.
should consider water profile...

getting realer. adjusting efficiency to 60s and adding a half pound base malt to get to 8%. could consider using cooked corn grits instead of corn syrup for more authenticity or even the real flaked corn. but. never brewed with corn syrup before so itd be nice to add to my resume.
im thinking we could package in 22oz bottles.

a lot simpler than the official recipe. not sure if all that corn syrup/sugar would fly but elsewhere they said use 1/3 corn. im just using syrup and sugar to try to ensure my final gravity will be low.
using cluster in the recipe but could/would probably substitute for something else that i already have on hand. maybe millenium
