Notes: Based on what Vinnie divulged, this is how I'd go about banging out a 5 gallon batch (don't think you'd want 10 gallons of this, hehe...) basing it on the requirements for an Oud Bruin...

Ingredients:
11.0 lb American 2-row
1.0 lb Caramel Malt 40L
1.5 lb Vienna Malt
0.5 lb Carafa Special® TYPE III
1.0 oz Perle (8.2%) - added during boil, boiled 45.0 min
Of course, add your whirlfloc and yeast nutrient. (This isn't an overly thick beer, we'd want to dry this out as much as possible.)
Nice starter of White Labs WLP530 Abbey Ale, or pitch at least two vials, and aerate the crap out of it. Hit it with O2 if you have a tank/diffusion stone.
Give it about 3 weeks in primary, keeping it above 70 degrees for the yeasties to do their thing. Rack when it hits 1.012.
Here's where I get fuzzy. Vinnie says that when this comes off to secondary, he removes the yeast. I'm assuming he's doing that by pasteurization? Either way, I doubt it'd ruin the beer if it's just racked as you normally would.
You'll need a bigger carboy than 5 gallons, to accommodate the cherries, so grab yourself a 6.5 gallon one.
Into secondary, dump a package of Brett, and give it another couple of weeks.
Into secondary, dump 2.0 lb mashed cherries, as well as a package of Belgian Sour Mix 1. For a full effect, soak 1oz of oak chips in some pinot, and add those to the secondary as well. Let that chill for 2-3 months.
Rack to a keg, stash for 6 months before carbing.
Hugely labour intensive beer, and man, if I tapped that keg after a year or so and it tasted like arse, I wouldn't be a happy bunny! |

Grains and DME were all Briess brand.
bring 1.5 gal to165F; remove from heat. Steep grains for 45 minutes with no heat.
Add tea to 1.5 gal in boiling pot. Bring to boil.
- add initial DME to kettle.
- bring to boil, add initial hops
- follow hop addition schedule
- add remaining DME at 15 minutes remaining
Cool down, transfer to fermenter. Add water to total of 5.75 gallons. Aerate.
OG 1.072 @ 70F approx 1.075@60F. Taste malty with strong hop bitterness
Pitch yeast.
Fermentation temp 70F
3/19 SG 10.17@60F Taste - hoppy nice balance.

Notes: 1. Grain temp is 24degrees.
2. Mash at 2.75 litres per kg.
3. Grain absorption is 1.15litres per KG. Expect 6.8litres absorbed.
4. Assume sp heat cap of grain to be 0.38 that of water.
5. Batch sparge twice.
6. Evaporation rate at boil is 4.5litres/hr. (I will ramp this up to try and achieve 5/hr)
7. Trub wastage assumed to be 1.5litres.
8. Dextrose to be added towards end of fermentation.
Want to achieve 15litres for ferment plus 1.5 trub, so 16.5 at end of boil. Absorption is 6.8litres. Evaporation on 90min boil 7.5litres. Total liquid = 31approx.
Mash with 16.5litres. (multiples of 1.5) at 72.3 deg for 60mins.
Add 5ml lactic aicd to bring pH to 5.30.
Add 6g gypsum, 2g CaCl to grist.
Stir at 20m, 40m and 60m.
Drain the MLT. to get 10 litres approx and heat up to 84. Pour back onto the grain bed and stir up. Should average in at 75approx. Stir and lauter then drain again and add FWH.
Batch sparge twice with 14.5litres total.
1st batch with 7.5litres at 76deg.
2nd batch with 7.0litres at 76deg.
Boil for 90mins.
Cool using ice bath circulation.
2 litre starter with 200g DME on washed yeast. |
