Notes: This is a scaled down version of a soured saison I brewed. The initial batch was 11 gallons brewed in 10/2013. It aged with dregs from Cantillon, Jolly Pumpkin and Orval until 04/2015 at which point I pulled a gallon and let it age on half a pound of elderberries. The Cantillon lambic-like character really came out after 60 days on fruit so I bottled it. This beer won bronze in the sour category of the MontreAler's Ale and Lager Throwdown (MALT) in Nov 2015. |

Notes: Based on Weldwerk Brewing's Juicy Bits NEIPA, Mujoose is super smooth and juicy.
Gold and Best in Hazy IPA or NEIPA Class at the Christchurch Home Brewers Association Annual Jasecomp IPA Competition on the 27th March 2021, with a BJCP score of 49.5/50.
Gold and Best in Class at the New Zealand Northern Region Amateur Winemakers and Brewers Association Regional Competition on the 10th October 2020, with a BJCP score of 46/50.

Mash at 152°F (67°C) for 60 minutes or until conversion is complete. Add the FWH hops during runoff, immediately after vorlauf, and allow them to steep in the hot wort as the mash is sparged.
Boil for 90 minutes. Whirlpool for 40 minutes (from start to rest) following the hops schedule.
Pitch the yeast and ferment at 67°F (19°C) for 2–3 days, then allow the temperature to rise slowly to 73°F (23°C) by the end of fermentation to ensure full attenuation. When fermentation reaches 1.5–2° Plato from terminal gravity (1.020–1.022), drop temp to 14C and add the first dry-hop addition. About 3 days later do a cone dump and add the second dry-hop addition for another 3 days. Cold crash to 1C and then do another cone dump.
Package at 2.6 volumes of CO2 and consume fresh. |

Lagered for 5 weeks at 34F
Finished at 1.021= 4.5%, don't think I pitched enough yeast.
Kegged on 5/2/2016 with 30psi, shook for a couple minutes and let it sit. Will shake every day at 30 psi for 4 days then see.
Tastes really good! easy drinking. chococlatey and roasty with a clean finish.
Next time i brew this i will use less dark malts..

Notes: Immerse the oak cubes in a bourbon of your choice and set aside while the beer is in primary. When primary is finished, put the cubes in your secondary vessel and rack on top. Let sit for at least a month, and then sample every few weeks until the oak flavor is to your liking. Now prepare the vanilla beans.
Cut the vanilla beans into one-inch long pieces and cut in half lengthwise. Scrape out the gunk inside and discard. Soak the beans in bourbon for a day or so to sanitize. Add to the secondary and let sit for two weeks, then bottle or keg.
This beer really benefits from long-term bottle-conditioning. Immediate tastings were positive, but six-month old bottles were outstanding. Time really allows the flavors to meld with the vanilla. |
