adjusting recipe. not messing with water profile much but adding some phosphoric acid to bring pH down. next time just get acid malt. found a nice pilsen water profile but my water is too hard to alter. next time build from RO.

the rice is not flaked rice but rather instant white rice. the weight is dry i.e. before cooking. for instant rice it can directly into mash.

Notes: Instead of montmorency cherries listed above,Used tart cherry concentrate, only 4 ounces: came out subtle on the cherry, which was actually ok(better than a cherry bomb)....I am going to rebrew w 6 ounces of concentrate soon....
Actual FG is much lower, w resultant increase in ABV. Saison yeasts tend to be beasts, and the BF calculator may not have taken that into account. My observed FG's have been 1.003, 1.002, 1.002. |

Notes: 7:/15 4pm: Started 5.5 L starter with 20oz light DME
Brix 8.2 SG 1.033
Boiled 15 min. Cooled to 65 degrees before pitch yeast - 3 packs
Yeast 2 packets dated March 15 and 1 dated April 20
7/16: Brew Day
Brought 7 gallons water to 161 degrees. Added grains and settled at 149 degrees. Held 30 min.
Added 3 gallons 200 degree water and went to 158 degrees. Turned burner on to settle at 161 degrees. Held for 30 min.
Took 55 minutes to drain to boil kettle
Opening boil Brix 13.2 SG Final Brix 16.0 1.0654
7/27: 6pm took out of freezer for diacetyl rest. room temp is 68 degrees
7/30: transfered to secondary and put back in freezer at 50 degrees
Still fermenting - bubbling right after transfer
one batch SG: 1.020 ABV 5.9%
2nd batch SG: 1.017 ABV 6.2%
9/28: started carbonation at 40 degrees and 12psi.
10/5: tested and increased carbonation to 15psi.
10/8: Tapped keg and carbonation seems good.

Notes: Made the usual starter w/ 4500ml filtered water and 1# DME. Boiled 15 min and cooled. Pitched, left for 2 days or so then cold-crashed.
Mashed in a little lower than we wanted and it settled around 148 - after 15 minutes or so we recirculated and stirred - mash was kind of stuck - dealt with that - got the temp up to 151 eventually and left it for the duration.
Mashed out as best we could - still very sticky. Started sparge - first runnings were 1.087 or so. Dropped like a stone and ended at 1.010. Ran out of liquid - did not collect 13g. Gravity was 1.057 so we added a g. of water. Preboil gravity at 50. Boiled 90 minutes as that is the traditional way. Post boil at 55 so added another g. of water. Original gravity of 1.051 w/ about 11.5g. in the fermenter. Lots of activity apparent by the next morning.
This beer went to the 2015 Homebrew Festival in San Diego and apparently was very popular - people came by the booth and said they heard that Claude was pouring a good Kolsch! To me, it's a tad heavy on that Kolsch malt - I think we need to back off a little. Got a little too much of the biscuity flavor going on. Still excellent and refreshing! Still a bit too light in color too!
Also sent 3 bottles to the Oregon State fair and got some interesting comments back. They seemed to think it had some yeast issues... |
