WLP001 Starter - 1.5 L
Day 0 - Final volume should be ~5.5 gal, not 6 due to incremental sugar addition.
--Save 0.5 Gal original wort for WLP099 starter.
--Save 1.5 Gal original wort for sugar
Mix sugar into 1.5 Gal - should yield ~2 Gal.
Aerate heavily.
--Pitch WLP001 to 2.5 gal to begin fermentation.
Day 1 - Begin adding sugared wort, 2.5 cups at a time, twice daily.
--Start WLP099 starter - ~250 ml (~1 cup, ~8 fl oz)
Day 2 - Up WLP099 starter to 0.5 gal
Day 4 - Aerate beer for 2-5 minutes, Add WLP099 starter made with original wort (entire thing), Add yeast nutrient.
Day X - Dry hop when fermentation is finished. May dry hop in keg if desired.
OG 1.069
Final OG w/ sugar @ 5 gal = 1.138
ABV > 15.5% - 18.1% w/ FG 1.020
ABV > 16.8% - 19.45% w/ FG 1.010

Notes: This is likely a good candidate for full volume mashing.
Tweaking my standard Mild a bit after trying Machine House. Oats aren't to style, but hoping they might capture some of the softness of cask ale in a bottle.
Any hop is fine. Just looking for 15-20 IBU for balance. Citra is specified here because I know I have pounds of it in the freezer. |

Notes: ENTIRE BATCH LOST. Turned in to bottle bombs, all bottles disposed of.
- 70 C strike temp.
- Dark grains added with 20 min left in mash (66 C).
- Used hop spider for first time.
- Forgot whirlfoc tab.
- Yeast re-hydrated and pitched at 20.5 C (1 packet), water for re-hydration may have been too hot.
- Fermenter set to 19 C.
- Volume was just on 20L from a 30L start.
- OG 1052 an 18.5 C (1053 predicted)
- Steeped tea bags in 500ml cold water (11 spearmint & 3 peppermint) strained after 3 hrs and flash boiled then added to fermenter @ 8 days SG 1022 (30/5/16)
- 1/6/16 (10 days) SG 1022 - no mint aroma but a mild mint finish,
Increased fermenter temp to 21C to try and drop SG.
- 4/6/16 (13 days) SG 1020 - no mint aroma but a mild mint finish.
- 5/6/16 Bottled using drops - FG 1020 (ABV - 4.7%)
- Bottles marked (CM+) have a cocao nib added at bottling.

Notes: Ale Yeast
Wyeast and White Labs both offer an Irish ale yeast — 1084 and WLP004, repectively — and these are popular choices for dry stouts. However, many English ale strains will do a good job in a dry stout, especially if they are relatively highly attenuative. Likewise, a “neutral” American strain — including the very popular strain available as Wyeast 1056, White Labs WLP001 or Safale US-05 — is also a good choice. If the yeast has enough character on its own to distract from the roast character, then it’s not appropriate.
Keep in mind that, although dry stouts are meant to be dry, they don’t have to be bone dry. You do not need to shy away from your favorite English ale yeast if it is only moderately attenuative. Dry stouts start at fairly low original gravities (OGs), so you can reach an appropriately low final gravity, even if your yeast strain is not among the highest attenuators. |
