Recycled about .5l from UIS bottoms. Boiled down to about 24l at 0.055 OG

A great beer for the female in your life.
I`ve made this brew 7 times now,and it is a mainstay for my woman.I`ve used US-05
WLP 029 and WYEAST 2565 all with great
results.Used Williamette in place of
saaz and prefer it.Last batch came out
at 6.0 ABV with a modification to my fly sparge setup.Grain bill holds at 11 lbs.
Last batch was with WLP 029,I think Wyeast 2565 was the best of the 3 yeast types that I have used. (just me and swmbo`s thoughts).
Made batch #8 with US-05 on 4-19-13
used 4 Madagascar vanilla beans soaked
in vodka for a week and added to secondary
It added a bit more vanilla flavor.Nice addition for added flavor.Will make this
a regular step in future batches,recipe
has not changed but 2565 rules the brew.
I made batch #9 on 9-22-13.Used original recipe with wyeast 2565, by far the best.
Bottled on 11-1-2013.The only tweak was
adding 12 oz clover honey at flameout.The
Vanilla beans in secondary are the bomb.
Recipe will not change from here on out.
This batch started at 1.057 and finished at 1.01 - 5.51 ABV.It is exactly where I Want it. SWMBO and my friends love it.I like it alot too but I am more of a stout
porter guy.I hope you like it and have good luck with it if you try it. -enjoy-
12-8-2013 Vanilla flavor has mellowed
nicely,lacing last`s till the end of the glass.Very pleased with this batch.
Batch #10 1-23-2015 recipe has not changed
will be bottling in about a week or so.
This brew is our house brew all year,it`s
one for the ladies.Will be ready for St.
Paddy`s day.
batch #10 is long gone.Finally retired and will be moving to Florida in 2 weeks.I will update next batch when I brew in in the heat for the first time,Goodbye Chicago.I hope you enjoy the recipe.-Will be back to brewing soon.

• 1kg pie pumpkin (boil)
• 120g molasses (preferably blackstrap)
• 4 oz maple syrup (preferably grade B)
• 1-3 tsp spice mix
• 500g pie pumpkin (secondary)
Mash at 68° C for one hour, sparge per your setup to collect ~6.5 gallons wort.
ROAST YOUR PUMPKIN IN the maple syrup and brown sugar but they are optional
(optional) Toss your cubed pumpkin in brown sugar and spices.
Toss your hops, boil for an hour, and kill it. I toss my spices in at flameout.
Spice Blend):
My spice blend is a mix of one tablespoon of cinnamon, one teaspoon of ginger, one teaspoon of nutmeg, and a quarter teaspoon of cloves. |

Notes: This is my First all Grain Beer. I love it!
Mash grains for 90 minutes at 150 degrees. ( lbs grain x 1.25/ 4 = mash water quanity). (sparge water= utilize 2 quarts water x lbs of grain/4 = amount of sparge water in hot liquor tank @ 170 degrees). Collect 6 gallons of wort. Add 1.5 ounces centennial hops and boil for 90 minutes, adding 1.5 ounces centennial hops after 30 minutes and 1.5 ounces of cascade hops after 80 minutes. Turn off heat, add 1.5 ounces cascade hops, and let steep for 5 minutes. Cool wort and pitch yeast. Ferment for 5 days and then transfer to secondary fermenter. Add 1.5 ounces simcoe hops and allow to ferment an additional 3 weeks. Bottle, using 3/4 cup corn sugar. Age 7 to 10 days.
Final Gravity was 1.013. anticipate a little bit more alcohol in final product. Initial Taste was very hoppy and a grapefruitty after taste.
This is the best beer I have ever made. Since i have only been doing this for 3 years i do not think that has much weight.:)
First Drink after conditioning: Beer has an initial dry taste with a grapefruit aftertaste as you swallow. A very drinkable beer and I look forward to brewing again. |

This is a 3 Stage Infusion Mash.The German name is Hochkurz meaning high temp low time I added a protein rest for the special malt. The Pilsner malt is my base malt it will make a nice light crisp color and taste. The Carapils will add to the head retention of the beer and I added a .5 kg Munich light to offset the Hop notes with a nice light malty taste and a little darker EBC.
To achieve Mash Temps add boiling Water
All Mash times are in Minutes.I have extended the beta sacrification rest to 40 min for a more crisp beer less sweeter beer.
I will use 1 Standard vile of WLP830 Yeast and doing a yeast starter 2 days prior to brew day fermenting between 11 and 12 celcius. The hops will add a nice citrus fruit and Melon smell. I'm going to dry hop in secondary for a better melon citrus aroma.I am boiling for 90 minutes to help with protein break down and head retention. I will be carbonating with DME to keep to Reinheitsgebot. I will be starting with 6 gallons calculating for a 1 gallon boil off. Leaving me with 5 gallons or 20 liters for fermentation.The water profile I have chosen is a light lager Pilsner works well with a German Helles. |

Notes: Terrible job keeping notes on this one. Didnt note how much orange peel and coriander I added to the secondary.
Next time plan on upping grain bill to 6 lbs of each.
Add ounce of Orange Peel and Coriander at 10 minutes.
Add .5 ounce coriander and 1 ounce orange peel in seconday for 5 days.
First brew was very good but a little light on flavor. |
