Notes: Description - Historically brewed to compete with the rising popularity of Pilsner in the 1800s, Kölsch style beer is defined by the Kölsch Konvention of 1986 as a "light, highly attenuated, hop-accentuated, clear, top-fermenting Vollbier (full beer)" and was served in a 200ml glass called a Stange. Today we brew PK true to form utilizing all German malts, yeast and serve it in a traditional .2L Stange. Tasting Notes: Soft, lightly sweet almost honey like malt character. Medium-low to medium Noble (floral, spicy, herbal) hop aroma with light sulfur and fruit (apple, cherry, pear) notes. Fuller yet light body with crisp dryish finish.
Notes: Kolsch - Dieter recipe with tweaks from Exhibit "A"s Goody Two Shoes per CB&B Article from 4/15/19, and Pfriem's Kolsch. Floor-malted barley added per Ex.A andTet hops added per pFriem. Crocess taken from Ex. A, 40 day crash min, 2 degrees per day from 68f to 48f then 4f8 to 38f and 38f to 32f once packaging is determined. London Lager Malt, Cologne malt & hop blend used due to low quantity of supplies.
Brewday Notes: Smooth brewday, no notable issues. Transferred at .75 ppm oxygen.

Notes: Water measurements were off on this brew so have adjusted the brew size to match estimated alcohol percentage based on OG and FG, could do with 2-3 litres less sparge water next time to get approx. 19 litres in fermenter. Also used recirculation on this one.
Used a big tub with cold water and ice and coil to cool wort which cooled pretty quickly even though outside temperature of 25.
Warm weather in Holland during fermentation, so pitch temperature around 19 degrees but temp went up during fermentation as high as 24 so decided to leave fermenter in tub of cold water in garage to stabilise fermentation temperature at around 20C. Fermentation is finished after 3 days, approx ABV 5.5%, dry hopped for 2 days, with 35gr of Crystal and 15gr of Citra.

Another very short explanation. What the Youngers logs have in extraordinary details for their brewing, all of the beers are very very simple. So, on to this awesome double IPA thing. A wee heavy little beastie indeed!
Ingredients
Grist – I haven’t used Golden Promise in quite a long time so I decided it was about time. You can absolutely use Maris Otter or really any other wonderful Englishy malt you’d like. I have come to really like two very different types of pale malts. My very favorite is the MFB pale malt. I’ve found that if you had to have one single malt to do really absolutely anything in the realm of beer, this would be more than adequate. Bitter, IPA, Pils, etc. On the other end of the spectrum, my other favorite malt for different reasons (mostly cost and its ability to play second fiddle extremely well) is Great Western pale malt. You’ll find a massive amount of American breweries use it for everything. I think it is very nice and does a great job, just not as good at everything that the MFB pale malt.
Hops – This beer, as can be seen, is about 3:1 or 4:1 Czech: English hops. The English ones can really be anything but I’d stay with a low alpha variety for the amount of greenery you need to add in. As for the Czech, I used 100% Saaz. Czech Saaz at that. Pivní Filosof, Evan Rail, Alistair Reece and I had a great conversation just a week or so ago about the ability to make a big hoppy beer using 100% Czech Saaz. This is pretty much that beer. The thought is/was that one can’t do it. You just can’t get that bitterness. This, is entirely untrue. What you will find is that the bitterness is very different. Its much less harsh. Additionally, I find the aroma is much much higher on this beer (all low AA% hop IPAs even) simply due to the fact of the vast amount of hop that goes in. More essential oils and such. If you need another reason to make this beer, do so for that fact. A big, crisp, dry IPA thingy with a butte tonne of low alpha hops.
Yeast – I really like the dry Nottingham for this beer. It dries out extremely well. Finishes quick. Its cheap! That being said, use what you like. A yeast cake would be good for those of you that don’t do starters well. Its very important you get enough yeast into this bugger to dry it out. |

EKG Hops: (2.4 oz.) 2012 Fall harvest, 2 Yr Age. Low aroma
Ahtanum Hops: (2 oz.) 2013 Fall harvest 1 year age. Med. Low aroma
Coffee: med. dark,6 oz. soaked in 1.75 qt. 34 degree cold stored, 5 days. Cold pressed to remove grounds. Extracted 1 qt. Good flavor, no bitterness.
Cacao Nibs: Roasted 300 degrees 5 min. to reddish brown with better aroma than 15 min. roast times, ground briefly in coffee grinder, added to 1.5 cup Johnny Walker Red whiskey, Brought to 1 min. boil, cooled and stored 10 days prior to addition at day 7 in fermenter.
Ahtanum Hops: Scheduled for day 3 in fermenter.
Fermentation: Oxygenated/agitated. 167 degrees start, ramp 1 degree a day to 170 starting day 3. 2 week total.
Day 7: Added hops,chocolate, 32 oz. coffee. Measured FG: 1.009.
Start cold crash day 12 to 65. Day 13 to 55. Day 14 to 45.
Keg day 15.
