NORTHERN BREWING STYLE DESCRIPTION: Raging aromas of passion fruit, peach and citrus burst forth with disturbing ferocity, burrowing into a bright white
head scarred with scents of bready malt. The Tasmanian Devil screams with wild heritage, boasting the rare, robust
Australian Galaxy hop. Long, vibrant claws of tropical fruit grip the palate, forceful and stunning, before relaxing
into a creamy balance against sparkling, silky base malt. Turning sharply from tyrannical flavor to a tame, dry finish, Tasmanian Devil is a wild, unpredictable creature.
SCHLAFY STYLE DESCRIPTION:
The idea for Tasmanian IPA was born when we discovered the Galaxy hop on a trip to Australia in search of next big hop. We knew its distinct fruity characteristics would lead to an intense IPA with an over the top flavor. We took that idea and used it as a model for a bigger beer—one that’s powerfully hoppy and dangerously drinkable. This aromatic ale is heavy on those Australian Galaxy hops and balanced in bitterness, with recognizable fruit notes of pineapple and tropical fruits. |

Notes: To brew the Old Rasputin Russian Imperial Stout clone, mash grains at 152°F (67°C) for 60 minutes. Mash out at 158°F (70°C) for 10 minutes. Sparge and proceed with boil, adding hops at specified intervals.
Chill to 70°F (21°C), aerate or oxygenate well and pitch ale yeast slurry. Ferment at 68°F (20°C) until fermentation is complete. |

Notes: This brew won gold in the Sangre de Cristo Craft Brewers SMaSH Competition. (Single Malt and Single Hops) Very hop forward but the Citra kept it from going over the top.
Inspiration came from reading of a Hungarian brewery that came up with a "hoplager" as their answer to the American IPA. Not sure what their IBU's came in at but I know I exceeded it. Never planned on it winning and was striving for outlandish. I thought I hit my mark but everyone who's tried it, liked it. (I'll try more hops next time ;) )
If you choose to make this beer make sure you do a good diacetyl rest and give it plenty of time to lager. Mine came out crystal clean with no off flavors. (that's what saved it with the judges) |

Notes: Do not use an airlock! See https://www.maltosefalcons.com/tech/guide-saisons-and-saison-yeasts about backpressure issues with WLP565. Well, that being said, just don't fill the airlock as the lid will do a better job keeping anything out of the fermenter.
Start fermenter at 19C for 3 days. Every day increase by .5C until 26C at day 17. Shooting for 1.008 and 83% attenuation as I am hoping for a slightly dry Saison to balance out the CaraVienne.
Will be using Tesco Ashbeck for the water.
Going with a 2L starter and will be setting aside one jar for a future batch.
This was an awesome batch of Saison. The Helles that was on tap almost didn't get touched until this was finished. |

Notes: multi-rest mashing:
- on step #2 & #3: resting the mash at this temperature has been show to improve the yield, regardless of the malts used. Varying the times spent at the 60 and 70°C rests allows you to adjust the fermentable sugar profiles. For example, a 20 minute rest at 60°C, combined with a 40 minute rest at 70°C produces a sweet, heavy, dextrinous beer; while switching the times at those temperatures would produce a drier, lighter bodied, more alcoholic beer from the same grain bill.

continuous sparge:
- The wort is re-circulated and drained until about an inch of wort remains above the grain bed. The sparge water is gently added, as necessary, to keep the fluid at least at that level. The goal is to gradually replace the wort with the water, stopping the sparge when the gravity is 1.008 or when enough wort has been collected, whichever comes first.

Notes: New School Imperial IPA.
Mash at 150F for 60 min. Add First Wort Hops when entire boil volume approaches 160F. 90 minute boil. Hopstand hops get added at flameout and stand covered for 45 minutes. Pitch and ferment 66F. First dry hop gets added when fermentation begins to slow. Cold crash once krausen falls to 40F for a day or two. Rack to CO2 purged dry hops in a bag or mesh container in serving keg. Let sit at room temp for 3 days, chill and carb. 44F serving temp and 9psi or so. |
