Notes: Mashed pilsner and wheat malt for 30 minutes at 150* before adding acidulated malt and lactic acid to the mash. After 75 min total mash, recirc'd as usual, filled kettle w/ 6 gal wort, raised wort to boil, skimmed precipitate, and rested 10 minutes to kill wild yeasts, then chilled to 95. Pitched lacto, purged kettle, sealed up lid w/ saran wrap. Kettle sat in hot 80*+ garage.
After 12 hours, warmed kettle gently a few minutes. After 36 hours, desired sourness was reached. Brought to boil, added salt, corainder and hops, boiled 5 minutes, then flamed-out and rested 10 minutes to kill the lacto yeast. Chilled to 70*. Racked to fermenter, oxygenated and pitched 2 packs US-05. Plan to directly keg after 10 days with bottling sugar and maybe a little yeast slurry.
Won 1st in the 4th Round of an Indiana Competition for German Beers, aka Der Hoosier Braumeister, in which home brewers and commercial brewers compete head to head.
Wonderful beer. Salt/Lemon Zest/Coriander in perfect balance for my taste. |

Notes: poor efficiency in mash. I think the water ratios I am using are wrong. apparently you are meant to mash with about 3l of water per kg of grain. I had 20l in this batch - too much?. maybe lower next time?
Tasting notes. Would definitely brew again. Really clean easy drinking beer. Very little ibu’s (seemed less than noted here). Just need to get the alcohol up to about 4.5%. |

Notes: ACTUAL:
Decoction Mashed.
- Mashed in with 120F water to reach +/- 110. Held for 10 minutes.
- 1st decoction (1/3 of mash). decoction brought to 150, held for 15 min. Brought to boil, boil for 10 min, returned to mash.
- Temp check 125F, then immediately to 2nd decoction.
- 2nd decoction (1/3 of mash), brought to boil, boil for 10 min, returned to mash. (temp check here was supposed to be 150, only hit 135, so proceeded with additional decoctions to bring temp up)
- 3rd decoction (1/3 of mash), brought to boil then added back to mash.
- 4th decoction (1/3 of mash) brought to boil then added back to mash. Temp check at +/- 145F. Held here for 30 min.
- Stirred in rice hulls, sparged with 175F.
2 Gallons into Fermenter
Pre-Boil Gravity: 1.033
Original Gravity: 1.051
(ended with 85% efficiency)
Used 15ml of 3068 Smack Pack, intentionally underpitched. Pitched at 60F. Fermentation vessel in ambient 66F room, will let fermentation rise naturally.
12 hours after pitching, beer is at 64 deg, no visible fermentation yet.
24 hours after pitching, beer is at 67 deg, no visible fermentation.
36 hours after pitching, beer is at 69 deg, visible fermentation, krausen on top.
48 hours after pitching, beer is at 70 deg, thick krausen, vigorous fermentation

Ferment at 63 degrees
Split the whirlpool hops; adding half at flameout. The other half once down to 165F.
Dry Hop in Two stages - 4 days each, split the dry hops in half also. Add the first half to primary. Stage one 8/29. Short .5 centennial, switching 1.0, increasing Apollo by .5.
10 day fermentation (63-64F at first, then ramp up to 68-70F once fermenation slows.
8 day, 2 stage dryhop in primary at 68-70F.
Rack to secondary and 4 day cold condition in the secondary at roughly 39F (basically refrigeration).
Force carb and drink 3-4 days later, or bottle and drink 1.5 to 2 weeks after priming.

As you can see, the layout of this calculator looks incredibly similar to the snapshot of the brew sheet.
Here are the results for 6 gallons: (Keep in mind, the Alchemist reportedly uses "Plaster of Paris" instead of Gypsum. Also, homebrewer lactic acid is typically 88% strength vs. the 85% version shown here).

I supplied two different results (in color). Notice the difference when using Calcium Sulfate Anhydrous (Plaster of Paris) vs. Calcium Sulfate Dihydrate (Gypsum) that must be used to hit 750 mg/L.
The information when whittled down, lines up... 6 gallons, approx. 21.6 grams plaster of paris, 1.2, grams calcium chloride, and then adjust mash pH to 5.1-5.3 with lactic acid. |
