Notes: The Mariner's Harvest Heritage Ale
The Concept: This singular beer captures a fleeting moment in time, brewed with fresh harvested Wild North American Hops (Humulus lupulus ssp. lupuloide) foraged from the cool, coastal climate of Atlantic Canada. This is a clean, crisp canvas crafted entirely to showcase the untamed, historic character of these native cones.
Flavor Profile:
Aroma: A complex and evolving bouquet that defies traditional hop categories. Look for dominant notes of Fresh-Cut Grass and Forest Floor, supported by a surprising thread of Spicy Bergamot (like Earl Grey tea) and a unique hint of Cool Cucumber or Melon imparted by the fresh, un-kilned cones.
Taste: Starts with a clean, balancing bitterness that is firm but not harsh. The middle palate features a refreshing Herbal complexity, which gives way to the "green" flavor of the wet hops.

YEAST
Omega OYL-044 Kölsch II, Fermentis SafAle K-97, or similar
Mill the grains and do a Hochkurz step mash: Start at 144°F (62°C) and rest 30 minutes; raise to 158°F (70°C) and rest 30 minutes; then raise to 168°F (76°C) for mash out. Recirculate until the runnings are clear, then run off into the kettle. Sparge and top up as necessary to get about 6 gallons (23 liters) of wort, depending on your evaporation rate. Boil for 60 minutes, adding hops and finings according to the schedule. After the boil, chill the wort to 60°F (16°C), aerate, and pitch the yeast.
