Notes: All-grain brewers should boil their dunkel wort for 90-120 minutes. Extract brewers may employ a shorter boil, from 45 minutes to an hour. Add the bittering
hops 15 minutes into the boil — never earlier! German wort has plenty of proteins, and because uncoagulated proteins envelop unisomerized alpha acids, you
get less hops utilization out of your bittering hops. German brewers prefer to wait 15 minutes to let the proteins coagulate. Add the flavor hops 10-20 minutes
before the end of the boil (or as late as at shutdown). Add the aroma hops near, at, or shortly after the end of the boil.
Chill the wort to at least 55-65° F (13-18° C). The optimum primary fermentation temperature is 50-59° F (10-15° C). Use two packages, containers, or
pouches of yeast, or make a yeast starter to increase the yeast count. Vigorous primary fermentation usually takes about seven days. At a gravity of about 4-5°
P (1.016-1.020 SG), rack the brew into a secondary fermenter and leave it there for another two weeks.
Then transfer the beer for lagering. Lager your dunkel as close to the freezing point as is possible for about four to six weeks. You can lager at temperatures as
low as -2° C (almost 28° F). During lagering, the remaining yeast in suspension reabsorbs or reduces a good portion of its less desirable metabolic byproducts,
such as esters, aldehydes, fusel alcohols and diacetyl. This makes the beer taste clean and crisp. The yeast also scavenges oxygen, which increases beer’s shelf
life. After lagering, rack off the debris one more time and prime with about 1/2 cup of corn sugar or dried malt extract. Alternatively, add about half a teaspoon
of your priming agent into each 12-ounce bottle and siphon carefully out of the lagering container.

Ingredients
5.0 lbs. (2.3 kg) English 2-row pale ale malt
2.5 lbs. (1.1 kg) flaked barley
1.0 lb. (0.45 kg) roasted barley (500 °L)
12 AAU East Kent Goldings hops (60 min) (2.4 oz./68 g of 5% alpha acids)
Wyeast 1084 (Irish Ale) or White Labs WLP004 (Irish Ale) yeast (2 qt./2 L yeast starter)
0.75 cups corn sugar (for priming)
To get that "Guinness tang," try this. After pitching the yeast to your stout, siphon 19 oz. of pitched wort to a sanitized 22 oz. bottle. Pitch bottle with a small amount of Brettanomyces and Lactobacillus. Cover bottle with aluminum foil and let ferment. When beer in bottle is done fermenting, pour it in a saucepan and heat to 160 °F (71 °C) for 15 minutes. Cool the beer and pour and pour it back in the bottle. Cap bottle and refrigerate. Add to stout when bottling or kegging. |

Used Briess 2-row and pilsner malt; Gambrinus Honey Malt.
Brewed using a BIAB system with a 10gal kettle. Used RO water with salts (see water notes). Squeezed the bag hard, pre-boil efficiency of 72%.
Oxygenated for 60 seconds with pure O2 using diffusion stone.
Prepared a 800ml 1.040 starter using DME and Wyeast 2565 about 6 hours before pitching. Pitched in 62F wort. Fermented at 62F for a couple weeks, ramped slowly to 75F over the next week or so. Cold crashed to 32F, added gelatin. Kegged a couple days later.
Tasty, easy-drinking beer. Definite crowd-pleaser. This beer aged well over the 30 days it took to kick the keg. The original recipe calls for WLP029 yeast, which I didn't have available at the time.

Notes: this website states quite a high IBU for this recipe but it certainly didn't taste too bitter.
Probably the best brew i have done this year. All my mates have commented on it and can't believe its homemade. even won a blind tasting contest amongst other well known beers.
Was made as a lighter version of Sierra Nevada's celebration ale - which also came out wonderfully- i had a lot of cascade and centennial left so just knocked this up as a lighter session ale.
its very citrusy and floral when young - but ages beautifully and was best after 2 months when the hops had mellowed out. |
