“The overall character of the beer is a dry, grainy malt character, firm bitterness and mineral structure, with lots of aromatics coming from the yeast. Saison is a good base for adding spices or fruit, but these are variations on the style; normally these flavors and aromas come from the saison yeast.” |

Added 1 oz Citra whole cones to keg.
FG 7.4 brix - 1.010
Fantastic - a (relatively) low ABV barlywine. The small amount of black patent adds a wonderful complexity. Ages great, actually this beer needs 4-5 weeks after kegging to reach perfection. |

Notes: This was originally called SaoirsIPA, but Monty made fun of the fact that I changed Saoirse's name for it. As it is an imperial IPA, this translates to "Saoirse the Great,"
a vastly superior name.
Transferred all but the worst of the trub from the kettle to get just about 5 gal. Pitched 2 packs of US-05. Unfortunately, caught the last heat wave of the summer and fermented at 77-79F for the first 3 days before a cold wave hit and temps plunged to 68-70 in the house - on day 3 of course after it mattered. Tossed in my dry hops in a hop bag and let it go another 4 days.
Huge improvement in hop aroma after dry hopping, extremely citrus-y, mostly pineapple rather than grapefruit. Could be some residual sweetness from the palm sugar (despite hitting my FG), or esters from the hot initial conditions :(. Still, quite tasty and very fruity. |

Notes: Mash all grains for 60 minutes at 155 degrees.
Sparge at 170 degrees.
75 minute boil with hop regimen above.
Primary ferment at 65-68 degrees for 10 days with Belgian Abbey ale yeast.
Rack to a secondary, add Brett yeast and wine-soaked oak chips. Ferment for 10 weeks, then add the Lacto culture and ferment for 4-6 months. Beer will have more sour character with longer aging. Rack to a keg and force carbonate, or if bottling include a small amount of fresh Abbey Ale yeast with priming sugar.
