| Notes: Mash the grains with a single infusion at the higher end of the temperature range (~156F) for big body and mouthfeel. Draw off and sparge to collect enough wort for a full-volume boil. Boil for 90 minutes, adding the hops according to the schedule. Add 1 teaspoon of Irish moss with 15 minutes left in the boil. Whirpool, chill, and transfer to a clean, sanitized fermenter, then ferment at 66-70F for seven days. Dry hop for five days in secondary. Notes: Thoroughly aerate wort prior to pitching yeast.
Wort needs to be at 8 degrees before pitching yeast. Increase temperature to 10 degrees for fermentation.
Fermentation at 10 degrees for 4 weeks to FG. Perform Diaectyl Rest at end of primary fermentation (raise to 16 degrees for 48 hours). Then drop to condition temp 1 degree for lagering 5 to 6 months, force carbonate and bottle, 330ml.

Notes: Guessing the PPG for Ashburne Mild is wrong on Brewer's Friend. Should probably be 36-37 (though I mashed relatively low)
Recipe turned out great. Dry, really chocolatey (Fawcett Pale Chocolate is my new favorite malt). Would probably make this exactly the same. Perhaps a little crystal malt, though it seems the mild malt takes the place of that along with the brown malt. |

Ph of Mash was a low 5.37, likely due to the addition of the extra malt at the end.
Ph of the sparge was 5.55 or so, which seems fine.
