Ingredients:
2.5 Gallons Tap Water
4 Gallons Bottled Water – Note: even though this is a 5.25 gal recipe you will need extra because of the fluid loss during the boil process
1lb Caramel 10L Grain
1lb Rahr 2 Row Grain
.5lbs Vienna Grain
.5lbs Carapils Grain
6bs Golden LME
7oz Centennial Hops
1 Safale US-05
Procedure:
Start with 2.5 gal tap water, add grain to cold water and heat water to 165 degrees, and steep grains for 45 minutes
Remove grains and bring wort to boil
Remove pot from heat, add 6lbs Gold extract and return wort to boil
Add 2oz Centennial hops and boil for 60 minutes
Add 1oz Centennial hops and boil for 30 minutes
Add 1oz Centennial hops and boil for 15 minutes
Add 2oz Centennial hops and boil for 5 minutes
Add enough bottled water to bring the specific gravity to 1.057
Cool wort to 70 degrees
Add 1 pack of Safale US-05 yeast
Fermentation:
Primary – 2 weeks
Secondary – 2 weeks
Add 1oz Centennial hops 5 days before bottling
Keg:
4 weeks after brew date

Notes: I have made this a dozen times, simple (ALMOST SMASH), the recipe is very forgiving. It may be better with Amber LME instead of Lite, but I can't remember. I like when the color is lighter, so people do not expect the quick buzz.. watch out.
Add the champagne yeast after a week or so in the fermentor.. no rush. |

Notes: 1. Steep grains at 155 for ~20 mins. Discard grains.
2. Rapidly cool to 100 degrees F.
3. Reduce ph to 4.5 using phosphoric acid (I used 8oz which was probably WAYYY too much)
4. Pitch Omega Lacto Blend Yeast and keep it around 100 Degrees for 24-48 hrs. Add CO2 on top periodically.
5. Bring back to a boil.
6. Add DME and Alcohol Boost (corn sugar).
7. Add hops.
8. Boil for 60 mins.
9. Cool, add 2 more gallons of water, and pitch yeast.
10. Two weeks later, add oak cubes and 3 oz raspberry extract.
11. One day later (probably could've waited longer), add one small vial of red food coloring, and then bottle. |
