Notes: A nice small-batch brew, a classic pale ale. Nicely hopped, with great bitterness, and the addition of malt gives it a well-rounded profile. I use this in my Mr Beer Coopers Craft Brewing vessel, which is 15l. Higher efficiencies will fluctuate the ABV a tiny bit. 70% efficiency will net you, on average, an extra 0.5%. |

Size: 6 gal (post-boil)
Original Gravity: 1.066 (1.056 - 1.075)
Terminal Gravity: 1.012 (1.010 - 1.018)
Color: 5.0 (6.0 - 15.0)
Alcohol: 6.6% (5.5% - 7.5%)
Bitterness: 55 (40.0 - 70.0)
Boil for 60 minutes. Lid on at flameout, start chilling immediately.
Cool wort to 66F and aerate well. Ferment at 66-68F until complete.
Add dry hops once fermentation is nearing completion (ie: below 1.015). Dry hop for 7-10 days total.
Rack to brite tank (secondary), crash chill to near freezing (if possible), add 1 tsp of unflavoured gelatin dissolved in a cup of hot distilled water per 5 gallons of beer, and let clear for 2-3 days.
Package as you would normally. I keg and carbonate on the low side (around 2 to 2.2 volumes of C02) to minimize carbonic bite and let the hop/malt flavour come through.

Notes: Toasted 8oz of sweetened coconut and added to boil at 6mins.
Made a tincture of 2 vanilla beans in jameson.
2/20/17 - Never got around to adding the lactose.
Could use more time with the coconut and added a little more vanilla.
Cocoa Nibs were perfect. Was more of a chocolate porter than coconut vanilla. |

Notes: 3.3 lbs honey
1.5 oz. dried hibiscus petals
1 oz. juniper berries
water to 1 gallon
Bread yeast (boiled to make yeast nutrient)
Lalvin EC-1118 (Wine yeast, for fermenting)
Bring 3/4 gallons of water to a boil. Crack the juniper berries, then add them to the water. Add the hibiscus petals. Let steep for 30 minutes. Ladle off a bit into a small glass, and add some honey. Use that to rehydrate the EC-1118.
Ladle off another portion into a small pot. Rehydrate the bread yeast, then bring to a strong boil. Add the honey to the jar. Grab an extra pitcher, and strain the juniper-hibiscus mix into it. Add the mix to the jar.
By now everything should be cool. Add the boiled bread yeast to the jar. Add the hopefully now foamy EC-1118 to the jar. Measure the gravity, and adjust with honey or water to 1.120. |
