We opted to try to replicate the Pliny recipe. WE actually used Pale Ale DME which is 6 L but is not in the selection dropdown. We also used a double packet of Safale 05. The yeast was rocking after less than 24 hours. The OG was around 1.084, much higher than above. I have a feeling that the IBU's are higher too. The process was pretty much standard - we boiled 3 gal, added almost 3 gal of near frozen water to get to the 5.5 marker. Got to chill the wort in the snow due to the recent storm that brought 10". Tasted after 2 weeks in bottle and fiery and clean with a different bitterness than I am used to. Definitely taste the high ABV as even the high IBU's don't mask it. But still balanced and quality. Wish I had a Pliny for direct comparison.
