Notes: Bohemian Pilsner take on the WW Advanced Lord Nelson Recipe.
Replaced the APA cans and US-05 yeast for:
2 x WW LME Bohemian Pilsner (Each LME Can adds 22 IBU and and 3 SRM - so recipe totals are 59.7 IBU's and 12.2 SRM)
250gm Pellet hops steeped for 30 minutes at 75C.
3 x M84 Yeast
Ferment at 15 degrees for 3 days
Then 18 degrees for 3 days
Then 21 degrees for 2 days for diacetyl rest
2 days after crash cool and sediment bottle dump to remove most of the yeast matter, drop pressure and add 100gms dry hops and leave for 2 days before dumping sediment

| Notes: I found it hard to locate an extract/mini mash recipe that is true to style. This is my take on an authentic Roggenbier. Steep the grains in a grain bag at 155f. for 30 minutes in 2 gallons of water. Drain liquid into boil kettle. "Tea bag" grain bag in 180 degree water to extract some of the remaining sugars. Drain that water into boil kettle and add enough water to bring kettle volume to 5.25 gallons. Heat to boiling and remove from heat. Stir in liquid rye malt extract (25% rye content) and return to boiling. Add 1 oz. Hallertau hops for 60 minutes. At 55 minutes add .5 oz Tettnanger hops and whirlfloc tablet (there will be more Trub than you want going into your fermenter). Cool to 64 degrees and pitch 3068 yeast starter. Ferment in primary for 7-10 days at 64-65deg. f. and bottle or keg (no secondary fermenter). I suggest bottling for conditioning and "correct to style" CO2 volumes and yeast sediment. If priming for bottling, aim for 3.5 to 4 volumes of CO2 for authentic carbonation and taste. Use good quality bottles. Preferably 500 ml German Weizen bottles. I do not keg my Weizens and Roggenbiers. |

Difficulty in cooling down. Ended up pitching at around 70degrees. The near frozen bottles of spring, froze and split so I had to buy new and freeze.
Decent bubble just not vigorous. ON racking after 8-9 days, FG was closer to 1.020. Incredibly cloudy and full of shit (tangerine rind and hops and yeasties. Difficulty siphoning. Had to clear hose and valve several times. Tried to sterilize at every point but difficult.
Racked again after another week. Added 1 tsp gelatin to 2/3 cup water. Valve was open and I lost about a beer's worth. Crap. Added another tsp to 1/2 cup and siphoned remainder. Clarity was better, no chunks but still hazy. We'll see how gelatin works. FG is now 1.015.Taste was decent with that hint of orange but I was tainted by the thought of all that went wrong...
Learnings - Freeze water bottles but watch for over freezing. Use ice bags for the cooling of the wort still in the kettle. Quick chill at all costs (or not sterilization).

Notes: -Take 2 15oz cans of pumpkin and mash in with 2 lbs Rahr 6-row malt and 3 gallons of water at 152 degrees for 1 hour.
-Strain the liquid and add to boil to achieve 3 gallons for boil.
-Steep Caramel 40 in grain bag in 2.5 gallons of water for 20 minutes until water reaches 170 degrees. discard grain bag
- Bring to boil and remove from burner, stir in 3.15 lbs amber malt syrup and 1 lb Pilsen DME.
-Bring to boil add 1oz cluster hops and light brown sugar(60)
-Add 3.15 lbs amber malt (15 min)
-Add 1 tsp pumpkin pie spice and 3 cinnamon sticks (0 min).
-Cool the wort to 100 degrees
-Fill primary with 2 gallons of cold water and add wort. Aerate and pitch yeast at 78 degrees.
-Transfer to secondary add 1tsp pumpkin pie spice.
-After 2 weeks add 1 tsp graham cracker extract before kegging or bottling. |
