Notes: Steep crushed malts & grains in 2-3 gallons of 150°-160° water for 30 minutes. Remove the grain from the hot water with a strainer, then bring wort to a boil. When boiling starts, remove pot from burner and slowly add 1 cup of the liquid malt extract and 1.0 lbs. corn sugar a bit a time, stirring to dissolve. Return to a boil, then add 1.0 oz. of Chinook hops, 1.0 tsp. gypsum, (water hardener, use in Guinness Clones), and 1 tsp. Irish Moss and boil for 60 minutes. With 30 minutes left in your boil, add 1.0 oz. Fuggle hops. Add 1.0 oz. Fuggle hops for the last 10 minutes of the boil. At the end of the boil turn off the heat, add the remainder of the liquid malt syrup and stir until all malt is dissolved. Let sanitize for 10 minutes. Cool with wort chiller. Strain the hot wort into a fermenter filled with 2 gallons of cold water top off to the 5.5 gallon mark. Add yeast when the temperature of your beer is less than 78°, and begin fermenting. Allow the beer to finish fermenting, wait about 3 more days, and then bottle your beer, using 0.75 c. corn sugar dissolves and sanitized in 1.25 cup water, (8 min boil).

Racked 10//5/15 Gravity = 1.016
Bottled 10/24/15 FG = 1.016
Color is close to target; mineral comes through with water adjunct. Initial flavor is smooth, with the mineral bite. Bottle condition for 2 wk. before next taste. |

Notes: 1. Bring 2.5 Gallons of water to temp. 155-160F.
2. Add 1lb of your Pilsen DME
3. Steep your speciality grains for 20 minutes -- Oats included.
4. "Sparge" the bag using .25 gallons of 160F water.
5. Bring the wort to a boil.
6. Once boil has been acheived, add 1/2 oz El Dorado Hops to boil for 60 minutes.
7. Add your DME and Lactose at 50 minutes.
8. Turn of heat at 60 minutes
9. Add your mandarin peel to steep in the wort for 20 minutes after flameout.
10. Cool your wort to 160F-170F and add your Cascade/Amarillo hops for 20 minutes.
11. Ferment for at least 14 days in primary, at day 11, add your Galaxy, Cascade, and Amarillo hops.
My goal is to make a citrousy, creamy, smooth, juicy/smooth beer with good head retention and mouthfeel. I might switch around the hops based on what I'm shooting for.
11/4/22: Beer is a tad darker than I hoped. Sparging made a huge difference: I retained my calculated OG of 1.072 even at 5.5 gallons. Chilling with refrigerated water really did the trick to bring the temperature down fast.
11/5/2022: Beer blew out of fermentor after 24 hours. Smells and tastes amazing. Very juicy smelling. Can't wait to dry hop.
11/15/22: Added my dry hop. Galaxy hops were a tad too bitter on the nose for my preference. Finished at 1.020! Very smooth flavor and well balanced sweetness and hop! Slighty tropical/fruity smell, but not nearly as strong as I'd expect, hopefully carbonation will help with this. Color checks out, not nearly as hazy as I hoped, but hopefully this means it won't get that weird "brown" oxidation color.
11/18/2022: Bottling was a disaster. The siphon kept getting clogged which led to a bunch of re-siphoning and oxygen bubbles. I feel oxidation will almost be imminent with this beer. Overall, the flavor and aroma is pretty much where I want it. I would have liked a little more sweet orange, so I will add more orange to the brew next time. The beer is incredibly juicy and hazy, just how I want it. |

steep grain as suggested on pack - and adding steeping grains into boil at 30mins. boil kettle set aside and add grains for 20 mins to steep then add to boil. Boiled kettle then poured into bowl at 7.5mins and let sit till 10mins then added grains for 20 then added to boil.
Boiling 5 litres of water as steeping grains in 1 litre to give 6 litres then adding 1litre of cold at fermenting total
Add hops as schedule. weighed out and leaving on side. Hoping non of the smell, flavour is lost as out in the elements. Vic secret smells outrageous! Amarillo hops is in a pack as finishing hops and using as suggested. Place in a cup of boiling water and let stand for 10mins then add to the fermentor. adding liquid and bag to fermentor. (not hopback)
Note let fermenter cool for 10 before adding vic secret then changed ice and water to cool further for 10.
Let cool for a further 10 mins while finishing hops were sitting in cup water before adding to fermenter. Amarillo hops in tea bag
added 2 litres of cold water to fermenter to get to 6 litres
waited 10mins to pitch yeast as first reading at 22 degrees. Pitched yeast at approx 20 d and shook like f**k. Done

After 6 days fermenting yeast has really slowed down. Going to rack half off and dry hop with vic secret (adding hops first then racking onto, and dry hop in the primary with 20 g wai-iti. Also going to bottle one beer now to see how it tastes. Shook both fermentors a little to swirl hops about.
After racking probably only got 2.5litre in both vessels left inc one bottled beer.

Notes: Steeped grains in nylon bag @ 165°f for 00:35. At 0:00, removed from heat and DME was added. Then back on the heat and brought to a rolling boil. At 1:00, added first hop addition. Premixed both second hop additions together prior. At 00:30, added hop additions evenly every 5 minutes, with the last addition at flame out. Immersion chilled to 80°f and then racked to 3 gallon glass carboy fermenter. Pitched the rehydrated yeast and topped with the airlock. Should be just the right amount of head space in the carboy with the amount of water loss during the boil. (About just shy of 2.5 gal) |
