Steep grains for 30 minutes at 155 F. Add to boiling water. Add 6.6 lbs LME, add 2.0 lbs DME. Return to boil. Add 2.0 oz EKG pellets and 0.5 EKG whole hops. Boil for 45 minutes. Add Irish Moss. Boil for 15 minutes. Remove from heat and add 0.5 oz EKG whole hops. Cool in ice water bath.

Notes: Pilsen and wheat malts provide a crisp and crackery backbone (and a rocky white head) to a dry beer where the yeast and hops are the stars of the show. The addition of cane sugar helps dry out the beer.
The Mandarina Bavaria hops, a new varietal from Germany feature intense tangerine, pineapple, lemon and citrus flavors with a resinous, herbal finish. Added exclusively in a post-boil hop stand and as dry hops, expect intense flavor and aroma with a lighter, refreshing bitterness.
Fruity and peppery, Wyeast's French Saison strain is highly attenuative, producing a dry beer, especially when coupled with the Brettanomyces blend. At the same time, it's high glycerol production leaves a fuller mouthfeel than is typically found in dry ales.
The Brettanomyces blend is primarily Brettanomyces Drei (guava, passion fruit, and apricot), with lesser amounts of Brettanomyces Bruxellensis (cherries, leather, barnyard funk) and Brettanomyces Claussenii (pineapple, citrus, mild funk).
The resulting beer should be dry, crisp, and pleasantly fruity. Expect prominent notes of citrus, tropical fruit, and pepper, supported by rustic funk and mild herbal notes. |

Named after my old dog Billy-Bob. Dense layers of malt, caramel, chocolate, and a hint of light-roast coffee give way to reveal a slight hop character you'll be surprised to find if you're used to drinking English brown ale. The finish is complex but balanced, and the gravity is not so high as to keep you from having another.

Notes: 1. Bring 2.5 Gallons of water to temp. 155-160F.
2. Add 1lb of your Pilsen DME
3. Steep your speciality grains for 20 minutes -- Oats included.
4. "Sparge" the bag using .25 gallons of 160F water.
5. Bring the wort to a boil.
6. Once boil has been acheived, add 1/2 oz El Dorado Hops to boil for 60 minutes.
7. Add your DME and Lactose at 50 minutes.
8. Turn of heat at 60 minutes
9. Add your mandarin peel to steep in the wort for 20 minutes after flameout.
10. Cool your wort to 160F-170F and add your Cascade/Amarillo hops for 20 minutes.
11. Ferment for at least 14 days in primary, at day 11, add your Galaxy, Cascade, and Amarillo hops.
My goal is to make a citrousy, creamy, smooth, juicy/smooth beer with good head retention and mouthfeel. I might switch around the hops based on what I'm shooting for.
11/4/22: Beer is a tad darker than I hoped. Sparging made a huge difference: I retained my calculated OG of 1.072 even at 5.5 gallons. Chilling with refrigerated water really did the trick to bring the temperature down fast.
11/5/2022: Beer blew out of fermentor after 24 hours. Smells and tastes amazing. Very juicy smelling. Can't wait to dry hop.
11/15/22: Added my dry hop. Galaxy hops were a tad too bitter on the nose for my preference. Finished at 1.020! Very smooth flavor and well balanced sweetness and hop! Slighty tropical/fruity smell, but not nearly as strong as I'd expect, hopefully carbonation will help with this. Color checks out, not nearly as hazy as I hoped, but hopefully this means it won't get that weird "brown" oxidation color.
11/18/2022: Bottling was a disaster. The siphon kept getting clogged which led to a bunch of re-siphoning and oxygen bubbles. I feel oxidation will almost be imminent with this beer. Overall, the flavor and aroma is pretty much where I want it. I would have liked a little more sweet orange, so I will add more orange to the brew next time. The beer is incredibly juicy and hazy, just how I want it. |
