Notes: Quick boil DME Brett beer (maltodextrin gives the Brett something to chew on over the months, and cane sugar encourages lower pH drop from the Lachancea, but can make with 100% DME, or mash some grain if you'd rather party like that). Pitch Philly Sour first, give it 2-3 days to get started dropping the pH, then pitch the Brett. Wait until Brett finishes up (3-4 months) before dry hopping, then package. |

Notes: Steep Grains in 2 gallons of 160F water for 20 minutes. Remove without squeezing. Bring water to boil and add malt extracts. Bring to a boil, add bittering hops, and continue boiling for 60 minutes. Remove from heat, add finishing hops, and cover brewpot. Cool to 70F, then transfer to brew bucket. Add ~3 gallons of water to make 5 gallons total. Take O.G. reading, then pitch yeast. Transfer to secondary after 3-7 days, Clarify on secondary for 7 days or more, prime and bottle. |
