Notes: This will be my attempt to make a light extract lager.
1. Warm your water to 150-160 F. Steep your specality grains for 20 minutes. Remove the grains from the water after 20 minutes, taking special care not to squeeze the bag.
2. Start your boil. After 15 minutes, add 15 grams of Willamette hops.
3. At 50 minutes, briefly pause your boil and add your Pilsen DME. Resume your boil immediately.
4. After 55 minutes, add your corriander seed, Tangerine Peel, and 1/2 Whirlfloc tablet to the boil.
5. Stop the boil at 60 minutes and remove your spices and hops.
6. Using refrigerated water, bring your temperature down to pitching temperature for your yeast. Use an ice bath if necessary for your wort. You should have 5.5 gallons of total water in your fermentor.
7. Once fermentation has slowed after a few days, move to your secondary vessel and add 1.5 fl oz. of Isinglass liquid.
8. Bottle once fermentation has ceased.

(10-6-2017) Activate smack-pack yeast ~3hr. Add yeast to cooled starter culture media (~iL water + 0.25 lb brown sugar + 0.25 DME; boiled and simmered 30min) in sterile 4L flask. Had ~7hr growth with occasional swirling before addition to cooled wort.
Steep grains at 66C for 30min, sparge with 77C water. Add Briess Golden Light DME (10.25 LB), bring to boil, add hops and gypsum at appropriate times. Cool wort, add to primary with remaining water, aerate, add yeast, and check with refractometer. Use one beer.net to convert Brix to OG.
Brix=17.5
OG=1.073 (lower than expected) =volume is may be closer to 6 gal than 5.5. Also not as black as I was shooting for. Next time don't steep in grain bag.
(10-11-17) Transfer to secondary. Brix = 11.8
(11-6-17) Brix =11.8 still. FG @ 1.031. ABV 5.5%. Fermentation stalled or original Brix not accurate due to insufficient mixing wort and remaining water. If OG was 1.087 (Brix of 20.6), then FG=1.023 and 8.4% ABV.
Bottled with ~1/2c corn sugar. Not enough room in carboy to fit all sugar solution I had planned (3/4c).
(1/14/18) ~9 weeks after bottling, it is now nicely carbonated with tan head. |

Notes: This Irish Red Ale is inspired by Dublin's gritty lower town docklands. This style is a malt-focused ale with an initial sweetness and a roasted dryness in the finish. You will find it's an easy drinking pint with a characteristic deep reddish hue, a true working man's ale.
Boil:
- Begin heating 2.8 gal (10.7L) of water to boil
- Steep grain until water reaches 77C, then remove and discard
- When water reaches a boil start timer at 60min
- Add 1.33oz East Kent Golding hop pellets.
- With 15min remaining, add all dry malt extract (DME) to boil.
- Timer: 0 min. Remove from heat source

Ingredients:
10 Lbs Light Briess DME
2 oz fresh Magnum Hops (10.9 Alpha)
2 oz fresh Halleratau Mittelfruh Hops (3.6 Alpha)
1 package Imperial "Dieter" German Ale yeast (G03)
Boiled 8 gallons of water in large 12 gallon aluminum pot.
Added malt, and about 5 min after boil, added 2 oz magnum hops.
Hop schedule:
2 oz magnum hops added at start of boil, boiled for 2 hours.
@ 2 Hr mark, removed boiling hops, and added 2 oz mittelfruh, boiled for 15 min.
After boiling, 7 gallons of malt solution was remaining, and the extra boiling time gave the wort a nice, dark copper color. Removed hops, let malt drain from hop bags,
then discarded.
Let solution cool overnight, and about Noon the next day, added primary vessel to a bathtub full of 55 F. Water.
Pitched yeast after about 2 hours cooling in bathtub. Everything was sterile, including yeast bag, airlock parts, container, lid, and long stirring spoon. Ale was kept at 55 - 56 F during peak of
activity which was significant as the airlock had to be cleaned
every several hours due to foam getting up into the airlock and
clogging the airlock cap holes.
Ale was showing pressure on the airlock after about 12 hours.
24 hours later, head was rising and airlock started working more vigorously.
Primary container is kept in cool water at about 57-58 F, during peak of activity.
After head falls, water will be drained and temp raised to around 62 F.
After 7 days, temp was raised from 62 F to 66 F. and held there for the next 3 days for cleanup.
Bottled on 11th day. 2.3 atmospheres, using 10.3 oz light DME, dissolved in 2 cups boiled beer.
Carbonation in bottles at room temp. for 14 days. Chilled to 32 F. and left for 3 months. After aging, this ale is amazing! |
