Notes: Made this for my wife who really enjoyed New Belgium's Snow day which appears to be discontinued. Was shooting for flavors of caramel, clove, orange peel and somewhat successfully accomplished this. Dry Hop addition added after tasting post fermentation found the beer was too sweet and simple.
Improvements:
Had to add a tincture of nutmeg/allspice/clove settled in whiskey for a week to add an extra punch of spice. Next time I'd add more spice during the boil and double the sweet orange peel. I'd also add some vanilla to taste at the bottling stage.
Closing notes:
Happy with the results, compared to other Winter Warmers this has more citrus/spice. Would like to play with water chemistry to see if the finish can be cleaned up. |

Ingredients:
2.5 Gallons Tap Water
4 Gallons Bottled Water – Note: even though this is a 5 gallon recipe, you will need extra because of the fluid loss during the boil process
1lb American Two Row
1lb German Munich
.5lb Carapils
7bs Dry Malt Amber Extract
4oz Summit Hops
1oz Liberty Hops
1oz Willamette Hops
1 Pack Nottingham Dry Ale Yeast
Procedure:
Start with 2.5 gal tap water, heat water to 165 degrees and steep grains for 30 minutes
Remove grains and bring wort to boil
Remove pot from heat, add 7lbs Dry Malt Amber Extract and return wort to boil
Add 1oz Summit hops and boil for 60 minutes
Add 1oz Summit hops and boil for 30 minutes
Add 1oz Summit hops and boil for 15 minutes
Add 1oz Liberty hops and whirlpool for 5 minutes
Cool wort to 70 degrees
Add enough bottled water to bring the specific gravity to 1.070
Add Nottingham Ale Yeast
Fermentation:
Primary – 2 weeks at 60-68 degrees
Secondary – 5 weeks at 60-68 degrees
Add 1oz Willamette hops to secondary fermenter 14 days before bottling day
Add 1oz of Summit hops 5 - 7 days prior to bottling day
Bottle beer 5 - 7 days after last dry hop addition
Bottling:
6 weeks after brew date
Use .2oz of corn sugar per gallon of beer.
Condition beer for 4 weeks at room temperature

Notes: Steep the additional spices in a separate sauce pan for 45 minutes. Use a small grain boiling bag for the whole spices. Keeps things neater and together.
Steep specialty grains at 150 degrees for 20 min.
Mix together and add extract.
Add hops at the right times.
Cool it to 70-75 degrees by your preferred method.
Ferment for two weeks. Transfer to secondary for two additional weeks. Add 2 tsp of cinnamon to secondary if desired. Then bottle or keg after corn sugar is added for carbonating. |

Notes: bit chaotic really spilt some on floor, sister phoned , cousin getting divorced , pan boiled over , Dene came round. Took to long to get to boil. worried was over hopped so curtailed boil by 10 mins then worried not bitter enough. also took ages to cool to pitchable temp keep forgetting to cool more agressively, arse knows what i will end up with. pitched at 20 cooled to 16 overnight. not ideal |

Notes: 9 lbs. Liquid Pilsen malt
2.5 lbs. Simplicity (clear) Belgian Candi Syrup, added at the last 15 minutes of the 90 minute boil
2 oz. Styrian Golding hops (4.5% AA), added with 60 minutes left in the 90 minute boil
1 oz. Saaz hops (3.0% AA), added with 30 minutes left in the 90 minute boil
Wyeast 1388 Belgian Strong Ale yeast or White Labs WLP570 Belgian Golden Ale yeast (I used this one.)
Bring water to boil.
Turn off flame, add malt.
Add hops.
Add syrup
Add hops.
Add whirlfloc tablet if you want, I did.
Ferment about 2 weeks at 70deg.
Check FG if close to 1.01, remove and keg.
Cold crash a couple of weeks. |
