Notes: Very standard beer recipe with a few minor editions. Using finely diced dehydrated sweet Orange peels in the last fifteen minuets of boil and adding Raspberry extract to primary to help give this wheat beer a bit of a fruit background while using medium alpha acid hops to prevent it masking the fruit addition. |

Notes: First go at this. Trying to make a classic Witbier with a small twist. I don't like brewing clones much. I figure if someone wants a Hoegaarden they will go buy one. I want to give someone a similar taste, but something a little different. Brewed on 4/6/13. I will ferment this in the primary until the beer clears wait an additional week then bottle. Bottle age at 65 degrees for 3 weeks then enjoy. Tasting notes to follow. |

Steep grains at 150-155 degrees for 30 minutes.
Add lactose with 5 minutes left in the boil.
The small amount of "light malt extract" was added to bring the ABV up slightly, into the desired range. It was not in the original recipe from NC Beernut, and could easily be left out.
Aroma hops addition was also not in the original recipe, and can be left out, but I think leaving it in makes a better beer.
Ferment at 65-68 degrees for 3 weeks.
A very simple, easy, delicious stout. Even my BMC drinking friends who "don't like dark beer" love this brew. |

Notes: Wyeast Urquell Lager yeast (2001) has been discontinued. Use 2278, 2782 or 2000 instead.
Carapils amount is over Breiss recommended limit of 1-5%. Could be too much head, thick mouth feel (too much body), a bit sweeter as less fermentable, and may dilute the “primary” flavours in the recipe. Adding more hops could compensate for the sweetness apparently.
Need at least 2 yeast liquid packs, in 2.5 ltr starter at 1.040. |

Notes: Yeast Alternatives: Wyeast 1056 (American Ale) or Fermentis US-05.
A day or two before brew day make a yeast starter if using a liquid strain.
On brew day, steep the crushed grain in 2 gallons of water as it warms to reach 150 °F, approximately 20 minutes. Remove grains from the wort and rinse with 4 quarts of hot water. Add the liquid to reach a total of 3 gallons and bring to a boil.
If you can do a full volume (5.5 gal) boil, it is recommended.
Turn off heat, add malt extract and corn sugar (dextrose), and stir until completely dissolved. Return to heat and add first hop addition.
Continue to add hop additions at intervals per ingredients list.
Cool the wort to room temperature, then top off with cold, filtered water to reach 5.5 gallons.
Pitch yeast starter and ferment at 64-70 °F.
Following primary fermentation (about 2 weeks), dry hop for five days before bottling or transferring to keg.
Prime to 2.3 volumes of CO2.

Steep chocolate malt in 1 qt of water in a separate pot for 30 min at 152 degrees F while heating boil water. Strain and sparge with another 1 qt of 150-170 degree water and add to boil water
Late additions at 15 min
I put the whole cherries in the boil. After the wort is cooled I strain the cherries out using a colander while transferring from the kettle to primary.
Need about 450B yeast cells (I often make a Belgian pale ale and pitch on the trub)
