| Notes: Place grains in a large steeping bag. In a large (at least 6 qts./6 L) kitchen pot, steep grains at 155 °F (68 °C) for 50 minutes in 3.9 qts. (3.7 L) of water. Begin heating at least 3.0 gallons (11 L) of water in your brewpot as the grains steep. Rinse grains with 2.0 qts. (1.9 L) of 170 °F (77 °C) water and add “grain tea” to water in brewpot. Stir in dried malt extract and bring wort to a boil. Boil for 60 minutes, adding hops at times indicated. Stir in liquid malt extract during the final 15 minutes of the boil. (Stir well to avoid scorching malt extract.) Cool wort and transfer to fermenter. Top up to 5.0 gallons (19 L) with cool water, aerate well and pitch yeast. Ferment at 68 °F (20 °C). |

Notes: Kiwi is peeled and cubed to 1/2", added at flameout, let sit for 20 minutes. Transfer into carboy. Primary fermentation will take a little longer than usual (15-20 days). When kiwis rise to top and are almost white in color, this will signify they have been stripped of flavors and sugars.

Notes: This beer should have a slight cidery character from the cane sugar, that's by design. It is also more hoppy than most American Cream Ale's more along the lines of an English Bitter. The specific hops are not critical, but I always use one high-alpha hop in conjunction with a finishing hop.
I put this into growlers with a low CO2 rate about 1.5 volumes which works out to 1/2 Tbsp cane sugar per 64oz growler to keep them from exploding. After a week or two they are ready.
Quick, cheap, easy to make and easy to drink. Its my table beer. |

2.5 Gallons Tap Water
4 Gallons Bottled Water – Note: even though this is a 5 gallon recipe, you will need extra because of the fluid loss during the boil process
1lb American Two Row

1/2lb Cara Pils/Dextrine
3lbs Dry Malt Light Extract

6oz Citra – aroma
2oz Centennial – dual
1 Saflager S-23 lager yeast
Procedure:
Start with 2.5 gal tap water, heat to 165 degrees and steep grains for 30 minutes
Remove grains and bring wort to boil
Remove pot from heat, add 3lbs Dry Malt Light extract and 3lbs Extra Light extract and return wort to boil
Add 2oz Citra hops and boil for 60 minutes
Add 1oz Citra hops and boil for 20 minutes
Add 1oz Citra hops and 1oz Centennial hops and boil for 10 minutes
Add 1oz Citra hops at flame out and whirlpool for 10 minutes
Cool wort to 70 degrees
Add enough bottled water to bring the specific gravity to 1.061 and
Add Saflager S-23 lager yeast
Fermentation:
Primary – 1 week at 68-72 degrees
Primary – 1 week at 46-50 degrees
Secondary – 1 week while reducing temperature slowing to 35-38 degrees
Secondary – 3 weeks at 35-38 degrees
Add 1oz Citra hops to secondary 5-7 days before bottling beer
Add 1oz Centennial hops to secondary 5-7 days before bottling beer
Bottle beer 5 - 7 days after last dry hop addition
Bottling:
6 weeks after brew date
Use .3oz of corn sugar per gallon of beer.
Condition beer for 4 weeks at room temperature
