Notes: First go at this is very rough: Using a 1.8 lb can of Mr Beer Cerveza HME as the extract. Actual IBUs will be slightly higher, no way to account for extract being hopped, but should be just enough to tip scales over into lower American IPA range.
Cane Sugar represents 4L of Mountain Dew (which has 518g of sugar), mostly decarbonated. Inspired by forum.northernbrewer.com/viewtopic.php?t=50805, hopping adjusted to fit 1) my available hops on hand and 2) still producing an IPA appropriate IBU despite my smaller boil size and different hops used.
Base recipe was all grain, added 8 oz of 60L American Munich to get SRM without using an absurd amount of steeping grains.

Notes: Steep grains in 3 qt tap H2O. at 160/150 (actually ran temp up to 170 on accident according to thermometer, though this candy thermo appears to register 10F high).
Boil size app 2.25 gallons, ought to be 2.4 per recipe (need bigger kettle), added DME near boiling point. Accidentally tossed in some of the flavoring hops at 60 minutes, not off to the best start.
Added flavoring hops and Irish moss and extract at 15 minutes.
Aroma hops as the pot was put into iced sink. Pitched the malt "tea" directly into the primary, did not add to boil as suggested in recipe - would probably have overflowed.
Pitched yeast at about 78F, put in Anny's room.
OG 1.044
Removed from Anny's room following day, put next to wall heater, maintained about 70F, rotating bucket. Kept in primary 4 days, racked to secondary, moved to tool room, app 65F.
Dry hopped in a cheesecloth dangling from the airlock, for two days, removed sack.
Bottled on April 24. Wort is amazing. Unfortunately, only 4.5 gallons, or 26 bottles.

1.29 gallons honey (25%)
3 packages Lavlin 71B yeast - White wine yeast. Ferment at 62. Allow up to a 4 degree gain in temp during primary fermentation. Don't go too hot or you'll get fusel alcohols.
I'm using wildflower honey because it's what I have available. Hopefully the spices and apples will cover the muddled honey. I tasted the honey before buying. I liked the honey, but I can’t recall tasting a honey I didn’t like.
Process:
Warm honey to lukewarm temp so it's easier to pour. Add 1.5 gallons of must to carboy. Use 2 gallons of must to dissolve honey. Pour mixture into carboy. Rinse containers with remaining 0.5 gallon of must. Add 6 crushed campden tablets to must. Wait 24-48 hours to aerate must and pitch yeast. After a few hours, check gravity. It takes a few hours for fruit gravity to stabilize.
Pitching process:
It is important to follow these steps in order. Mix together 1/2 cup warm water with GoFerm addition at 104 F (lukewarm). Slowly mix in yeast. Then slowly add must to mixture until temp is within 10 F of must. Aerate must with pure O2. Use a slightly longer aeration duration due to the higher gravity and lower solubility of O2 into the must. Pitch GoFerm/yeast/must/water mixture. Pitch pectic enzyme. Aerate again at 12 hours with pure o2
Yeast nutrient process: Stagger yeast nutrients every 24 hours for the first 3 days and at day 7. Use 4 grams nutrient for each addition. May want to rehydrate nutrients before adding to the must. Otherwise it will create a nucleation point and the co2 could cause foam to spill.
PH: monitor the pH daily and add a tsp. of potassium bicarbonate (more if needed) if the pH drops below 3.5.
De-gas process: degas twice a day during primary fermentation (4 - 5 days). Use a wine whip or something similar.
Secondary process: Rack to secondary at 3 weeks. Monitor gravity periodically. When gravity has reached terminal, add spices(See "Spice process".) Wait until desired flavor has been achieved then rack again. Add super kleer, wait for mead to clear up then add potassium metabisulfite for it's antioxidant properties.
Spice process: Add spices after racking to secondary. High quality cinnamon and vanilla is super important. Michael Fairbrother recommends Madagascar bourbon vanilla beans and Vietnamese (saigon) cinnamon. This is real cinnamon. Michael doesn't give amounts so I'm starting light. Start with 1 bean and 1/4 tsp cinnamon, add more to taste.

The only thing "classic" about this stout is that it's brewed the way Greg likes it! Nice and dry, but more hopped up and more alcoholic!
This is the first time I brewed with my new 21L pot, and I accidentally added too much water to the initial boil. I had to spend an extra 28 minutes boiling to get my volume down to fit the fermenter which resulted in an extra IBU kick. To preserve the flavour, I added the leftover hops for a 10min flavour infusion as the recipe initially intended.
Don't use jet black roasted barley. Look for a deep dark brown colour roasted barley. Black or chocolate malt is no substitute when making a "classic" stout. Steep at 65-71C for 30 minutes then remove with a strainer.
Add gypsum for 60min boil (or don't add it).
Use English hops (such as Northern Brewer, Goldings, Fuggles)
Use Irish Ale type yeast (or English ale if you must). Aerate wort very well.
Enjoy within 3-4 weeks from brew day.
Consider swapping out some dark malt extract for additional head retention malt. |
