Notes: Next time I will add 1oz each @ flame out, and 3oz each @ whirlpool (150 degrees F) for more flavor. Aroma was nice but not much came from the 4oz in the whirlpool. I used a wort chiller for the first time and I made the mistake of cooling the wort too much during the whirlpool. I'd also use a different yeast. Hopefully washed yeast from a Veil DIPA. I may try swapping the caramel 10 for some spelt next time too. |

Notes: From Leah Dienes, owner/brewer at Apocalypse Brew Works in Louisville, Kentucky. First brewed this as a homebrewer in 1989, to recreate a smoked Hefeweizen she enjoyed in Bamburg, Germany.
This beer won multiple medals at homebrew competitions, including the President's Choice Award at the FOSSILS' Smoked Beer Competition.
The malts she used were from Weyermann. There is no info on water chemistry, so you might recreate the water chemistry from Bamburg, where this beer originated.
She brewed this with a step mash - starting at 148F and holding for 15 minutes, than raising it to 152 for the remainder of the 90 minute mash.
The original gravity target number is accurate - 1.053. Adjust brewhouse efficiency or grain bill to make it fit your system and process. |

Notes: I hit about 149 to 150 on average for the mash temp. I topped off with one liter of water but didn't attempt to take another temp reading. I am assuming it was about 150 on average. Seems like 25lb is about the max for my mashtun. I added a lot of salts this time so we shall see how that all works out. Aged this in a 5 gal balcones whiskey barrel for 4 months. Took runner up Best in Show at the 2014 Bay Area Brew Off which had about 250 entries. |

Notes: First initial taste, slight more citrus and not as dry finish as 2X out of the bottle. But a damn good beer!! This keg went quick. I have a small amount of frozen wet hops and this is the first beer I put a hop bag in the keg. Flavor slowly built over a week in the keg with a pleasant fresh flavor to the beer. I am saving my fresh hops from now on to finish my IPAs!! |

Notes: Brewed 2/10/14. Blocked the false bottom on accident in the mash tun due to float so I had to transfer it to the kettle and then back to the tun. Topped off with 3/4 of a gallon of water to hit 151F. pH was 5.2 (estimated at 5.4). Hit 85% kettle efficiency. Efficiency was a it lower than usual might have been from sparging too fast. Runoff was also quite cloudy so not sure if that had something to do with it. False bottom got clogged a couple times when draining into the carboy. Possibly too much pellet hops and hot/cold break. Temp on day one of fermentation is about 64F. 2/12/14 temp has been between 65-67F. Added 3/4 of a pound of corn sugar in about a cup of water to boost up the OG. 2/13/14 temps were about 68/69F. 2/14/14 took out of the swamp bath and brew is sitting at about 71F. Dry hopped on 2/24/14 when all signs of fermentation were done. 3/5/14 biofined with 2 tbls. Cold crashed 3/7/14. Racked to keg 3/9/14. Pretty tasty IPA that has a bit of that catty thing going on. Wondering if I repeat this if I should switch all citra additions to 0min. Took 2nd place in the category in the Bridging the Gap competition. |
