Marshall Bishop of trinitybrewers.com is known in the homebrewing world for his painstaking journey trying to recreate Treehouse Brewing’s famous Julius IPA. Marshall spent a year exploring different yeast combinations, grains, and hop combos in an effort to get as close to the real thing as possible.
Day 1 – S-04/T-58/WB-06: 92%/5%/3% – pitch all day 1 at regular pitching temp 72º
Day 2 – Reduce temperature to 64º
Day 8 – Raise temp to 70º and dry hop
Day 10 – Cold crash for 2 days and keg or bottle

Notes: Single Decoction Mash; Mash-in, 120 f Protein Rest.
Take approx 1/3 of the total mash to decoct, run the decoction through the 120 f, 140 f, and 150 f, rests for 20 mins each, then bring to a boil and boil for 30 mins adding liquor as needed. Dump the decoction back into the main mash and adjust as necessary to hit;
140 f - Hefe Rest, 20 mins
Heat to;
150 f - Sac Rest, 90 mins
Heat to;
168 f - Mash-out, 20 mins

Used RO water from a machine in Burbank. This beer should be served young, I bottled this beer from the primary after 8 days of fermentation and those bottles won Best of Show at the Mayfaire Competition in 2010. |

I wasn't picking up any lavender when I was emptying the sediment after about 2 weeks, so I boiled some additional Lavender and added it in. I'm a big lavender fan, so I really liked it. If you want more of a subtle flavor, I'd stick with just the measurement used in the recipe. Didn't pick up much lemon flavor, probably because the hops were pretty intense. Overall I was pretty happy with the brew. |

Notes: Mix 2 TBSP of brown sugar w/ pumpkin and spread the canned pumpkin (make sure it is pure pumpkin) on a baking sheet and roast in oven @ 350 F for 60 min; it should have a caramelized crust on top. Put the pumpkin with your grains for the mash. No mash out.
Add the pumpkin pie spice and vanilla to secondary. |
