Ingredients, adjusted for what is available at Micro Homebrew:
- 16 lbs -- Rahr, Premium Pilsner
- 14 oz -- Bairds, Black Malt
- 14 oz -- Crisp, Roasted Barley
- 14 oz -- Simpsons, Naked Oats
- 14 oz -- Briess, Chocolate
- 14 oz -- Bestmalz, Melanoidin
- The original recipe directs to use a 2 qt/lbs mash thickness, but that won't fit in my mash tun, so I'm going to shoot for 1.5 and just monitor the conversion using a refractometer.
- I typically mash in my brewing kettle without a false bottom and then transfer to my plastic cooler mash tun in order to conduct the sparge. The transfer only takes a couple minutes and this strategy allows me to use direct heat as needed to adjust the mash temperature as things cool.
- I also typically mash out at 168°F or so for 10 minutes. This recipe instead directs you to sparge with 170°F water. I intend to skip the mash out step and go directly to the sparge.
- 7.7 AAU -- Magnum (60m)
- Yeast Nutrient (use as directed on bottle)
- Sparge with enough water at 170 °F (76.7 °C) to collect 7.5 gallons (28.4 L) of runoff
- Top up to 5.5 gallons in the fermenter as needed.

Notes: Empâtage en deux temps
Attention j'ai volontairement baissé l'efficacité de ta SDB à 65% car tu n'atteindras pas les 80% avec un double empâtage.
C'est une variable d'ajustement. Il faudra en fonction de tes mesures adapter cette valeur (le volume de rinçage et le sucre à l'ébullition te permettent d'ajuster au besoin)
Premier temps :
450kg de Pils + 50kg de Carapils + 25kg Caramel Munich III (140-160) = 525kg
1300L eau ajustée avec Sulfate de calcium et le Chlorure de calcium et l'acide lactique
Idéalement PH=5.5/5.6
Monopalier 80 à 90 mn / 70°C (test iode)
1000L de rinçage 78 °C PH = 6 (je réduis par rapport à recette normale car tu vas réempâter dans ton liquide)
Deuxième temps :
On réempâte dans le premier moût (suite à filtration et rinçage) en étant plus large sur le volume initial pour gagner un peu en efficacité car tu n’empâtes pas avec de l’eau mais avec un moût haute densité
450kg de Pils + 75kg de Carapils + 50kg Caramel Munich III (140-160) = 525kg
Vérification et ajustement du PH au besoin on vise PH=5.5/5.6
Monopalier 80 à 90mn (à adapter selon test iode) / 70°C
900/1000L de rinçage 78 °C PH = 6
Ajustement du volume de rinçage en fonction de la quantité de liquide en cuve d'ébullition mais attention ébullition longue donc pas mal d'évaporation.
Ebullition / Houblonnage (80 à 90 mn) :
on ajoute les 50kg de sucre ou moins selon la densité (variable d'ajustement)
Refroidissement 20°C
Fermentation (faire test atténuation limite !)
Ne pas trop remplir le fermenteur Ca va fermenter fort !
Levure : 0.75g à 1g/L de BRY97 soit 1.5 à 2kg
(2 x fois plus que pour bière à 5% !!!)
Température :
régulée à 20°C pendant 1 semaine
puis 18°C pendant 10 jours
puis 4 semaines de garde à 12°C
puis cold crash à 2°C pendant le temps nécessaire
Dosage CO2 :
le style donne 2.6g/L mini et 4.5g/L max, je partirai sur 3.5 à 4g/L |

Notes: Add vanilla bean tincture and roasted cacao nibs into fermenter after bottling several “straight” bottles.
Roast 8 oz cacao nibs on day of use: 350F for 15 min
BREW DAY (13-Dec-19):
7 mL hop shots at 120 min, whirlfloc and yeast nutrient at 5 min.
60 sec of O2 delivered. Ferment at 64F. Pitched at 75F, chill to ferm temp in fridge.
UPDATE (26-Dec-19):
Bottled 6 with coopers drops (Yakima caps). Added 6 oz toasted cacao nibs and ~1 oz of vanilla bean tincture (= 2.5 beans). Let sit for 3 days before kegging. Bottle remainder with two variant ideas below.
29-DEC-19:
Kegged 3 gal, after 24 hr in kegerator, carb at 30 psi for 24 hr
0.8 oz table sugar dissolves in 8 oz water to prime ~1 gal of remaining RIS, target ~2 vol CO2.
Added 5 oz cold brew (6 oz into quart of water, strained down into 1/2 quart, 24 hr in fridge). Bottled 6 beers (CCV). Added 2 oz of 3 oz total of cinnamon/ancho tincture (0.1 oz cinnamon stick and 0.5 oz ancho peppers (at least two years old) in ~4 oz vodka for two weeks. Bottled 5 beers (CMC).
12-JAN-20:
Added 0.3 oz cinnamon stick and 1.5 oz ancho peppers (both chopped up) to vodka. After 2 weeks, add to kegged RIS after straining solids.
22-JAN-20:
Strained solids and ended up with 6 oz vodka tincture. Added to almost full, cold 3 gal keg, purged headspace 5 times and shook up. Taste test after 24 hr and see where carbonation and flavor are at.
Tasted a bottle of CCV, carbonation was spot on, so moved all bottles to cellar temp. Dark chocolate and coffee flavor predominate, still want increases roastiness added next time (roasted barley). |
