packaged and tasted. Really nice tropical notes up front, but the somewhat bracing bitterness is still a bit too much. Will dial it closer to 1:1 by delaying the hop addition further (30 -> 20 min). Should reduce utilization further and boost good fruity notes from the nelson. Recipe updated 2024-03-03.

Switching back to BRY97 and because this beer is bracingly bitter I thought I would balance the BU/GU a bit more. Adjusting IBU from 75 to 65. This would put it 10 units above the GU of about 1.055. Really like the flavor of this one, but hoping for a bit more balance on it.
I think Lutra has a tendency to leave behind a bit more so it was beneficial to have it last time, but BRY97 and a closer BU/GU should do the same thing.
Also, adding 4 g of ascorbic acid to the mash for antioxidation purposes. https://www.homebrewtalk.com/threads/vitamin-c-the-game-changer.698328/ for reference. Due to us canning, we're looking for any anti-oxidative protection we can get.
Initially made from a Love2Brew Kit.
Made with BRY97 the first time, but don't have it on hand. Using Lutra dry yeast from Omega @ 72ºF. Originally called for BRY-97 at 68ºF. Lutra is expected to attenuate a bit more so ABV might be higher. Also do not have American pils around so using Wey Floor Pils.

| Notes: This beer hit 76-78 degrees for 2 days while in the fermenter. I kegged half of it after about a month in the fermenter and let the other half continue to ferment. Because initial keg was not fully fermented (1.018) the first bit was sweet and pretty cloudy. After a couple weeks in the keg it's cleared up and tastes great. I think the other half will taste much better since it will be fully attenuated. .....the other half never fully attenuated, looking back, I've realized that it's because I did about 2-3 brews using the BIAB method and that method causes fermentability issues because of the thin mash. Something to do with enzymes. I will brew this beer again but maybe simplify the grain bill. |

Notes: used a bit more water than planned and collected a lot more, probably due to running hose to bottom of cooler under grain bag, eliminating dead space. This may explain high efficiency.
Additionally, squeezed hop bag and got almost a half gallon of extra wort.
Or maybe I really had much lower ph and that made a difference.
Final note- initially measured OG at 1.07, then mixed wort and got 1.062 |

Notes: I have made this recipe to make using my Grainfather and will be using grain sourced from Ireland
My idea is to brew a more older style bitter ale that is more malty and less citrus then the Americain inspired IPA's
I intend to use a yeast starter and then let the fermentation carry on for two weeks so hopefully it will all but ferment out in about a week and the second week the yeast can be left to clean up after its self and settle out a bit
I think I will ferment it at about 19c but that might change to a bit lower tempreture if I see any advice it might beneficial to the beers flavour |

| Notes: I would recommend this yeast because it leaves a bit of residual malt behind. Extract can tend to leave a bit of residual sugar behind (sometimes too much) which is why I subbed in some corn sugar, if you use it put it in a 10min. If you don't want to use it the beer will end up around 6% with an estimated OG of 1.060. It's really up to you. I would recommend using 2 vials of yeast for this brew because the OG is a bit higher. If you don't want it spicy hop flavor sub out the Willamette addition for cascade. You could also use centennial instead of cascade. Let me know if you want to dry hop but I would do it with a couple ounces of cascade or centennial. I looked at the rise up red and it said it's pretty much all cascade and centennial. If the AA% is way off let me know and I can update it and send you a correction. If you can keep fermentation temps below 70F that would be ideal too, especially if it has been hot in the "Hood". Happy Brewing! |
