Notes: Substituted WLP007 with S-04; Glacier with Willamette hops.
Cool/ferment 67 degrees until specific gravity stabilizes at or near 1.018.
After fermentation, rack beer off yeast and onto coffee (Guatemalan) in a CO2 purged keg with coffee (5oz per keg) hanging from bottom of keg lid in a hop cylinder. Purge head space, cold crash and let beer sit on Coffee for 48 hours. Remove hop cylinder with coffee, purge headspace again and force carbonate.
Can substitute WLP007 with S-04 in summer if need be. |

Notes: This is a Catharina Sour, BJCP provisional style X4 (not in brewers friend database, so just listed as Berliner Weisse - but bigger: OG range 1.039-1.048 and abv range 4.0-5.5%).
Just bring to a boil after mashing and then immediately lower temp to about 95° F. Adjust wort pH down to 4.5 with Lactic Acid, and pitch Lacto (I use Goodbelly shot, but any Plantarum strain works well). Cover kettle and try to hold temp (but plantarum works at room temp if you can’t) for about 24 hrs. Then bring to a boil to lock in acidity level, and boil for only 10 minutes, adding whirlfloc and any hops if you want (IBU range 2-8, but don’t need any). Pitch neutral ale yeast, but at lager rates because of the lower acidity.
Add fruit (I like Goya purée- 4 packs is almost 4 lbs) after primary fermentation, let sit a week or two, and then rack off fruit into keg or bottles. |

this Beer really worked out well. If I had to do it again I would reduce the IBU to 26. The addition of eclipse hops has given the beer a orange /mandarin flavor which is extremely appealing.
I will keep this formula exactly the same with the slight reduction in the IBU. |

Notes: Making a Czech style octoberfest or a Czech amber lager. Didn't have German Pils or German Noble Hops on Hand. Using dry bohemian lager yeast at 55 deg then will step up as it begins to ferment out. Might go a little colder to start but based on the pitch rate it seems like 55 would be a little better.
Don't have Munich I but a ton of Munich II so trying to get through it. |
