Bunch of protein in boil because of new grain mill - 1/4 oz tettnang 4.0AA @ 15 mins - 1oz hallertau 3.8AA @ 6 mins ---------- - Ended up with about 5 gallons in 6.5 gallon carboy. Lots of headspace. Pitched at 73 degrees. OG was 1.061. Fermentation was vigorous even with the excess headspace and blowing through the airlock. Next morning gravity dropped to 10.54 and temperature dropped to 68. Temperature rose again the following couple days to around 70. After 3 days put the carboy in a water bath and temperature dropped to 64.
