Notes: This is Harrisons Brewshed Secret City recipe. I scaled it down...it uses Vic Secret and one of my favorite hops - El Dorado, with a bit of Mosaic whacked in at the end for rounding out the aroma. Super super simple beer.
His Vic Secret - AA 15.5% Yield: 24.5 IBUs @30 Mins Pineapple/Passionfruit
His El Dorado - AA 14.1% Yield: 29.5 IBUs @30 Mins Pineapple/Pear/Watermelon/Stone fruit
Dry Hop:
His Vic Secret - AA 15.5% Yield: @3 Days
His Mosaic - AA 11.5% Yield: @3 Days Blueberry/Berry Medley/Bubblegum/Citrusy
I added some Acidulated to handle pH issues.

Initial ABV came out at 1.047 and 15ltr into fermenter
Windsor yeast apparently does not attenuate all sugars and can complete in 2 or three days. This batch kicked off nicely and seemed to complete after 3 days, (temp 17-18.5c). on 5th day temp controller raised to 20c
Day 8 Final ABV 1.012 (ALC 4.59%)
60g table sugar used for bottle conditioning, aiming for 2.0
Tasted ok, no off flavours, plenty of body, could be a good one
Aug 22 finished all bottles, turned out to be ok, will do it or something similar in future |

Notes: 1. The FIRST Corn Sugar - Dextrose addition under Fermentables is actually the syrup left over from candying blanched orange (1.2x) and lemon (0.4x) peels. This syrup is made by dissolving 160g sugar into 160g water, and simmering for 45 mins. Do NOT add it into the mash, this syrup should be added in at the end of boil with the whirlpool hops. It is placed here to get a closer recipe calculation.
2. The SECOND Corn Sugar - Dextrose addition under Fermentables as actually to account for the candied peel added in at dry dry hop on day 3 for fermentation. Do NOT add it into the mash, instead see point 3 below. It is placed here to get a closer recipe calculation.
3. The Candied Peels addition under Other Ingredients are the blanched and dehydrated peels from the above step, and are added in with the dry hop at day 3 of fermentation. Blanching is performed by:
1) Add peels to pot of cold water (enough water to cover peels)
2) Heat water to a boil
3) As soon as boil starts, remove from heat, strain peels, and dump water.
4) Add more cold water to pot along with strained peels
5) Begin process again, to a total of 4x. |

Nice beer but I think the Fark wit1 was a touch better. Different yeast and hops. Still a top drop. Tastes fairly dry |
