Notes: Ferment for 10 days at 68F.
After fermentation cool to 55/60F, wait 24 hours. Slowly remove yeast whether you're reusing it or not.
Dry hop at 57F for 4 days.
After 2 days dump hops and start cooling. Slowly remove more hops as you're cooling one or two more times.
Cold crash for 4-6 days as cold as you can (below 40F). |

Airlock smells great.
8 brix FG.
The London ale yeast made a massive haze(typical with highly hopped beers) and some banana esters. This would be much better without the caramunich and 60L.
Fruity and pine notes.
Smooth and drinks easy.
If I made this again I'd use 05 or 1056 yeast and add a bit more bittering hops. |
