0.6 oz Thai chili deveined and de-seeded
Volume of tincture with chili's was 250ml, all added to secondary vessel
Roughly half a container of coconut extract added to secondary with 2 vanilla beans soaked overnight in vodka

There is no need to use finings such as unflavoured gelatin as the yeast is extremely flocculant and will drop brilliantly clear on its own. |

Notes: Delta - Fruktig stout
Etter oppskrift gitt fra bryggeri, så skal det tilsettes frukt i dette ølet. Jeg anbefaler juice etter primærgjæring (som om det skulle vært tørrhumling), så tilsett etter ca 5 dager. Frukt som gjærer gjør at ølet blit tørt, noe som gjør at man kompenserer med ikke-gjærbart melkesukker.
Når det kommer til valg av juice, så kan dere gå får enten det som de brukte selv (cherries 80% og raspberries 20%), eller finne på noe på egenhånd. Det skal svare til ca 7% av mengden øl, altså 1,4 liter juice.
Husk å sterilisere juicekartongen og sjekke at juicen er pasteurisert!
Vann: 16,2 l mesk, 12,5l skyll (Grainfather calculator, 2l loss. Se også andre kalkulatorer for å være sikker).
Humle: Dere kan vi bruke opp noe av det vi brukte på dobbel ipa. Hvis vi ikke har noe igjen fra dette brygget, eller andre, så har jeg lagt til humler som er typisk for europeisk stout. Spør meg gjerne om humlekombinasjoner!
Laktose: Jeg har lagt til 400g oppskriften. Tilsettes når det er 10 min igjen av kok (Late addition, som i ikke under mesking). Dette gir ca 9SG poeng, noe som svarer til rett under anbefalte 12 SG poeng, da dette tar høyde for evt lav effekt. Dere kan evt kjøpe inn 100g/200g ekstra, i tilfelle OG blir høyere enn forventet eller om dere vil gamble litt.
Salter: 2,5g CaSO4, 3g CaCl, 3g CaCO3 (mulig dere må kjøpe inn denne), 3g NaHCO3. Salter er basert på london style, som er typisk for low ABV stout og porter.
Syre: pH er 5,34, som er ganske bra. Vil dere ned på ideelle 5,2, så kan dere spørre meg om hjelp senere. |
