Single infusion mash at 159 for full bodied beer. Mash out at 170.
Divide dry hop additions into 2 parts, first at 95% attenuation and second for 4 days after yeast have attenuated. Secondary fermentor only needed if not using a conical. Remove from yeast at 95% attenuation (about 1.024SG). |

Notes: This is a nicely balanced beer (definitely leaning hoppy, but you can taste the crystal)
It is a North-Weast IPA - it has the Northwest bitter backbone with some haze and a little of the smoother "juicy" hop flavor and mouthfeel. The color is darker than many IPA's due to the amount of crystal which looks a little strange with the haze.
I feel this beer takes good from many leanings in the IPA world and combines them nicely.
Used 15 Gal of RO water and added a crap-ton of salts. I used another site's water calculator and I don't think it was correct. I added:
5 Tbsp Calc Chloride
9 Tbsp Epsom Salt
19 Tbsp Gypsum
So that may have had something to do with how it turned out but it is quite good. I hope I can reproduce this someday with a more sane water workup.
I may try to get the malt flavor of this beer with another type of malt like Munich or Vienna instead of so much Crystal so the color is better while keeping the flavor there.
