Brewed on August 13th, 2014, mashed in at 65C
Mashed-out for 10 minutes for final volume of ~21.7L
- SG a bit high at 1.049 (target 1.048). 90-minute boil.
Flameout hops had a 15-minute steep before turning on the chiller; wort temp was almost immediately below 82C where I added the second amount of flameout hops.
Final volume ~15L
Chilled down to 18.3C, OG high at 1.072.
Aerated with 90 seconds of pure O2, pitched rehydrated yeast.
Day1: the next morning, airlock activity was present, and quite active by the evening.
Continued for 4-5 days before stopping;
beer temp got up to 22C.
Day 12:
25/8/14 - FG finished a bit high at 1.015.
Racked beer to CO2-purged keg and added dry-hops in a weighed-down mesh bag; left keg at room temp.
Day 18
31/8/14 - Removed dry-hops, set keg in keezer to chill down to ~7C before starting carbing.
IPA Water profile
For red IPA, the water profile should be something like 75 ppm calcium, 20 ppm magnesium, 50 ppm bicarbonate, 200 ppm sulphate, 50 ppm chloride and 25 ppm sodium with a residual alkalinity near zero, which, with these numbers, works out to about (-)5.
The thinking here is that 75 ppm is a good calcium level for beer clarity and medium mineral structure, 20 magnesium is good for yeast health, 200 sulphate is good for a clean crisp hop character, the chloride and sodium are low but slightly enhance the malt character and the near zero residual alkalinity value along with the caramel malt bill will drive the mash pH down to about 5.4, which will be good for a clean hop expression and malt brightness.

Sierra Nevada Resilience IPA

The Camp Fire–the most devastating wildfire in California’s history–has hit close to home for Sierra Nevada Brewing Co. While the Chico brewery was spared, many of Sierra Nevada’s employees, patrons and neighbors lost everything as the Camp Fire ravaged northern Californian.
To help raise much needed support for the recovery efforts, Sierra Nevada has created a beer called Resilience IPA. Sierra Nevada, along with many of its professional brewing peers, will be brewing and selling Resilience IPA with all proceeds donated to the Sierra Nevada Camp Fire Relief Fund through Golden Valley Community Bank Foundation.
It is our hope that homebrewers will make a batch of Resilience IPA in solidarity with Sierra Nevada and pro breweries across the country. While we can’t sell our creations and donate the proceeds, please consider donating to the Golden Valley Community Bank Foundation if you are able.

INGREDIENTS
For 5 gallons (18.9 L)
11 lb. (4.99 kg) Rahr 2-Row (90%)
1.25 lb. (0.57 kg) Crisp Crystal 60L (10%)
1.0 oz. (28 g) Centennial hops @ 80 min (33 IBU)
1.0 oz. (28 g) Cascade hops @ 15 min (8.5 IBU)
1.0 oz. (28 g) Centennial hops @ 15 min (15.5 IBU)
0.5 oz. (14 g) Cascade hops @ Whirlpool (2.6 IBU)
0.5 oz. (14 g) Centennial hops @ Whirlpool (4.7 IBU)
0.5 oz. (14 g) Cascade hops @ dry hop (0 IBU)
0.5 oz. (14 g) Centennial hops @ dry hop (0 IBU)
Imperial Dry Hop yeast or American ale yeast of your choice.

After steeping, remove specialty grains and bring water to a boil. Note: when adding malt extract, it is recommended to turn off or remove heat so as not to scorch the extract on the bottom of the pot |

IBU: 60
SRM: 10.5
81.5% base malt (we use Canadian 2-row)
8.5% munich malt
8.5% caramel/crystal 8 malt
1.5% caramel/crystal 60 malt
Kettle hops: CTZ
Whirlpool hops: Cascade/CTZ
Dry hop: CTZ/Centennial/Chinook/Cascade, about 1lb/bbl total
Ferment with English ale yeast. Our house ale yeast is a proprietary British heritage strain. You’re looking for extremely flocculent, fruity, fast ale yeast. We ferment at 67F.
I have altered the bill to include malt and hops that I obtained from the Northern Brewer Chinook IPA kit.
