Notes: Not true to style. Using American APA-style hops. 21L into fermenter. Diacytel rest and dry hopped w/ 30g citra for one week before bottling. Followed by lagering for 12 wks.
Additional notes: Skipped adding extra yeast and racking. Rather, went straight into bottle after three weeks. Citra dry hop gave a slight cat pee funk. Otherwise, highly drinkable - good malt sweet/bitter balance, good carbonation and clear enough to read the newspaper through it. Crisp and clean. Will definitely brew again but without the citra dry hop! |

Notes: Sour cherries were frozen, then thawed and pitted, and then frozen and thawed again before adding to the secondary. Added 1/8 tsp liquid pectic enzyme (several years old, so maybe no good) at the time to help clear haze. Lots of secondary fermentation from the cherries and juice. Also added 1 tsp gelatin (softened in 1/4 c cold water) finings. Still some haze before bottling, so added 1/4 tsp powdered pectic enzyme. Bottled with 2.6 oz. corn sugar.
Final gravity 1.003! ABV 8.3% |

Terminal Gravity: 1.012 (1.010 - 1.018)
Color: 5.0 (6.0 - 15.0)
Alcohol: 6.6% (5.5% - 7.5%)
Bitterness: 55 (40.0 - 70.0)
Boil for 60 minutes. Lid on at flameout, start chilling immediately.
Cool wort to 66F and aerate well. Ferment at 66-68F until complete.
Add dry hops once fermentation is nearing completion (ie: below 1.015). Dry hop for 7-10 days total.
Rack to brite tank (secondary), crash chill to near freezing (if possible), add 1 tsp of unflavoured gelatin dissolved in a cup of hot distilled water per 5 gallons of beer, and let clear for 2-3 days.
Package as you would normally. I keg and carbonate on the low side (around 2 to 2.2 volumes of C02) to minimize carbonic bite and let the hop/malt flavour come through.
