Notes: Fermentation Profile: 14C for 2 days, 10C for 7 days. Then second staged to a corny keg. Increase 3C roughly every 12 hours until you get up to 20C. Leave at 20C for 2-3 days, do a gravity reading to ensure fermentation is complete before ramping down the temp 3C every 12 hours until it reaches 0-1C. Leave for 3 days before gassing/drinking. This is based on the speed lagering methods as discussed on the Brulosophy Blog.
1 pack of dry W-34/70 to 100g of DME to 1.2 litres of water (preboil). 15-20C for 12-18 hours, 3C for for 6-10 hours.
Review Added 11.4.17 - So this is the first time I used the 'speed lagering' process and I must say I'm very happy with it. I 2nd staged and did the temperature ramp up/ramp down in a sealed corny keg (no airlock). The stuff was ready to gassed and drinkable right and the end of the temperature ramp down. For this recipe I originally planned to use Saaz hops but stuffed up, turned out I didn't have any (must have got drunk again and not updated my stock list), hence the use of Hersbrucker & Halleratau in this 'Bohemian' Pilsner. The end result was a delicous varient on a traditional recipe, came out a little creamy, I served the keg at a work party to rave reviews.

Notes: this is a porter in the style before the creation of black patent malts. in this style a percentage of the first runnings were drawn off and boiled to a dark caramelized syrup and then added back to the boil to add color and caramel sweetness. so that will be a part of this recipie. after mashing is compleat (before sparge) take 3/4 of a gallon of first runnings and carefuly reduce to a dark syrup without burning. start the boil with the rest of runnings,sparge, hops and licorice. once the syrup is ready add it to the boil in the kettle.
side note, for this recipe also you need to steep the hops in 1q of 160•F water before adding, 30 min should be fine. when adding just throw all the hops and liquid into kettle. this is the way it was done in the later 1700s. |

Mash as you would normally. Haven't used rice hulls yet and haven't had a stuck sparge. Head the strike water to around 170, and pour over the grain bed. Rest for 60. Did not do a mash-out, and personally don't think this beer needs it. Sparge at ~170 deg. Boil for 90 min. Add Centennial hops at 30 minutes to keep IBUs down as they can easily overpower the light body. Cool and pitch US-05 (create starter night before or morning of brew day) once down to around 70. Fermented this in primary for 7 days (active fermentation was done in 3), and bottled. Bottle conditioned with 5oz table sugar for one week and started drinking. Beer was excellent and 1.5 weeks in the bottle. Mellowed some with another week or two, but for the wheat and hop bite, best drank before 3 weeks. This was a hit, even with the bottle cap issues we had regarding consistent carbonation. This is our new household staple. |
