appeareance: 3/3
aroma: chocolate but covered with the esters. more chocolate needed and cleaner malt profile. change the yeast and ferment lower. age longer. 6/12
taste: good attenuation, roasty and chocolaty, balanced. lacks toffee and nutty. add more biscuity, brown, amber or melanoidin malt. bitterness in style. more attenuation, more alcohol. 15/20
mouthfeel too little carbonation. age longer and use very healthy yeast. 3/5
Overall: less protein, more carbonation, cleaner fermentation. 6/10
Total: 33/50.
Very good beer but not a winner. Will brew again, recipe will follow.

Notes: - Homebrew store ran out of UK pale so had to substitute some Maris Otter
- Brewed on 10/6/18
- Expecting mash efficiency of 70% (vs. typical ~75%-79% for smaller beers) which implies a pre boil gravity of 1.078
- Add brewing salts and lactic acid to the strike water prior to doughing-in
- Initial PH was X.X vs. 5.37 expected. **Tested PH meter and need to recalibrate. Can't rely on reading which I believe was showing too high.
- Mash temp fluctuated a bit but was able to settle it at ~154F
- Hit 17.9 plato pre boil gravity which converts to 1.074 vs. 1.078 target so 66% mash efficiency vs. 70% expected. **For big beers going forward I should not expect better than 66-67% mash efficiency.
- Original gravity reading was 23.6 plato which converts to 1.099
- After boil had ~6.25 gallons in the kettle and ~5.75 gallons made it into the fermenter
- Pitched 2 smack packs of wyeast 1728; started fermentation at 64F and held here.
- Packaged on 10/17/18 and final gravity reading was 1.027 so attenuation was 73% vs. 71% expected.
- This beer scored a 40 and got second place in it's category in the Square Kegs Winterbrew 2019 competition |

RELER A PARTE DA ÁGUA: https://byo.com/bock/item/1260-practical-porter
Mash in at a higher temperature to leave more unfermentable sugars in the wort. This gives the beer a sweeter porter profile.
Astringency
Beers containing more dark grains are more likely to have some astringency in them. This is because darkly-roasted malts give up their tannins a bit easier in the mash. In a dark beer like a porter, adding less dark malt really isn’t an option. So, it pays to keep two things in mind. First, if you don’t oversparge, you probably won’t get an excessive amount of astringency, even in the darkest porter. Monitor your final runnings and don’t let them drop below SG 1.010 (or rise above a pH of 5.8, if you have a pH meter). Also, you can cool down and taste little samples of your runnings as you direct them to your kettle. Once the runnings start to have a puckering, drying sensation to them, stop collecting wort.
Mashing and Steeping
For all-grain brewers, a single infusion mash is all that is required for a porter. For a “rounder,” full-bodied brew, mash between 152 °F (67 °C) and 156 °F (69 °C). Mash out to 168 °F (76 °C) when the mash is done to (mostly) stop enzymatic activity. In addition, there’s absolutely no reason to extend your mash beyond the point in which an iodine test shows that all the starches are converted. |
