Notes: Add sugar and yeast nutrients with 15 minutes left in boil. Cool wort and transfer to fermenter. Aerate wort and pitch beer yeast. Ferment at 70 °F (21 °C). Rack to secondary when fermentation is complete and add Brettanomyces and dry hops. Let condition for 2 months before bottling. Bottle in heavy bottles. |

Bubbled like crazy for two days solid.
12/13/15- rack to secondary 1.030 - 8.14% abv
balanced. Not too sweet. Chocolate notes.
Add to secondary - 3 chopped scraped bourbon vanilla beans soaked in stranahan's Colorado whiskey for 5 months! |

Notes: Will attempt a simple multi step mash with a ferulic acid rest at 44C for 20 minutes at 1.5 l/kg, later adding 5.9l at boiling to get a mash temperature of 64c for another hour or until conversion is complete.
